This curry is one our family's favorite dishes, and also one of the only ways we can get the @KidSisters to eat okra. π
Okra just doesn't get the respect it deserves, and most people that don't like it have had the unfortunate experience of eating a slimy mess.
π Tomato Curry & Fried Okra π¨βπ³ An Ital Recipe π
Β Β Β Okra was used in the most recent recipe I posted on Hive, and here it is again. "Why?" Well, okra is cheap and healthy, and honestly, that's reason enough for us in these tough times.
π Ingredients π§
Tomato Curryβ red onions - 1 or 2β bay leaf - 1 β tomatoes - 10 (3 cups purΓ©ed) β ginger - thumb-sized piece β green chilies - 2 or 3 β cumin seeds - 1 tsp β coriander powder - 2 tsp β turmeric powder - Β½ tsp β chili powder - ΒΎ tsp β sea salt - 1 tsp β cane/palm sugar 2 tsp | Fried Okraβ okra - 350 to 400 gβ besan - Β½ cup β sea salt - 1 tsp β cumin seeds - 1 tsp β amchoor (mango powder) - 1 tsp β coriander powder - 1 tbsp β chili powder - ΒΎ tsp |

Β Β Β As I make this post, I realize the knob of ginger and palm sugar were left in the kitchen during the above photo. You need them even if they aren't in the photo, just so you know.

Β Β Β Congratulations!! You just made tomato curry and fried okra. Pat yourself on the back, brag to your cat, goldfish, or loved one, and build a pyramid of fried okra on top of your tomato curry to enjoy with some brown rice.
Β Β Β As I already mentioned, this curry is one of the few ways the @KidSisters will eat okra, so I try to make it a few times every month.
Β Β Β As you can see, Monkey-B is the most stoked family member to enjoy this dish.

Yes, it's definitely okra season here in Thailand too. They're a strange vegetable for kids due to their texture... here they go straight into the curry pot! Nice post.

Adapt it to what you have, all that matters is the okra is crunchy and it goes along with a good tomato soup or curry. Something about tomatoes and okra, they just belong together.

Okra and Tomatoes are such a good combo, and your Tomato Curry sounds like the perfect accompaniment! Yum! π Another good way to cook okra is slice it, drizzle with olive oil, salt & pepper, then bake it in the oven for a bit, turning every so often until it is ready.
Well...both of the @KidSisters only want to be chefs when they grow up. I don't know it that's good, perhaps it shows they haven't seen much else in life other than massive amounts of awesome meals.
We do have another okra dish which I stir fry the okra in a bit oil before adding to a besan-based curry. The result is similar to your oven technique, and a bit of carbon is nice to give it that roasted fiery flavor.

That's a beautiful dish. I have never cooked okra before. When I have my own kitchen again I will have to try it.
Thanks @carolynstahl. Cooking fast with high heat is the best way to handle okra in my opinion, it will help avoid stickiness.

I shared this recipe with someone who asked for it in my coconut milk rice post, , I think that's how this happened. This recipe is the only way our kids will eat okra happily.
I've always been curious about okra, but I'm sure it tastes bitter and I'm afraid of the trauma it would be like eating bitter gourd, both look the same :D
I am not a big fan of okra either because it can sometimes be sticky and stringy. But with this preparation there is no bitterness or stickiness, it's very tasty.
