It's been months since I have made any Indian breads - roti or paratha. I have been craving the methi paratha for sometime now and so, it's methi paratha for dinner tonight.

Ingredients
wheat flour - 1 cup
gram flour - about 3 tablespoon
chopped fenugreek leaves - 1 cup
red chili powder - 1 teaspoon
garam masala - 1/2 teaspoon
turmeric - 1/2 teaspoon
cumin powder - 1/2 teaspoon
salt - as per taste
oil - 1 teaspoon
Water for kneading

mix all the above ingredients and knead into a smooth and soft dough. This should take about 3 - 5 minutes. cover it with a clean cloth and let it rest while you do anything else. Clean up your kitchen or make a sabzi to go with the methi roti.

After about 30 minutes, divide the dough into about the size of a small ball. Use a rolling pin and make a flat bread. Dust some dry flour so it doesn't stick.

Heat a thick bottom pan, and when it is hot, add the roti on the pan. Flip it after about 20 - 30 seconds, and add ghee. Flip the roti again in 30 seconds, add ghee on this side as well. In about a 10 seconds, flip the roti again. At this point, it should be done. The rotis will be soft.
