Paneer Butter Masala

Today I will be cooking Paneer (Cottage cheese) Butter Masala. This is not an authentic recipe but a super easy and quick meal that you can enjoy with either bread or with rice. As I have already mentioned this is my version of the Paneer Butter Masala, I have used ingredients from the freezer only because I wanted to use them up. I have tweaked the recipe a little to reduce the amount of tomatoes I add, since I am not a huge fan of the slightly tangy flavor of the tomatoes in this recipe.

Ingredients I have used

2 Large onions roughly chopped.
2 small tomatoes roughly chopped.
4 small cloves of garlic.
1/4 inch ginger.
cinnamon stick (about 1/2 an inch).
cloves - 2.
Butter.
Oil (I use coconut oil).
Mawa (dried evaporated milk) - 2 tablespoon. This is the ingredient I used from the freezer. You absolutely don't have to use this. If I didn't already have it, I wouldn't have used it.
Turmeric Powder - 1/4 teaspoon
chili powder - 1 teaspoon
Fresh cream - 3 tablespoon (I normally add full fat milk. I had cream and I wanted to use it up too.)
Kasturi Methi (Dried fenugreek leaves) - 1 teaspoon
salt
Paneer

**Method **
Heat 1 tablespoon oil in a pan, add cinnamon, cloves. When it turns slightly fragrant, add ginger and garlic. Give it a minute and then add the onions and tomatoes. (I normally add pumpkin seeds and melon seeds here, but since I didn't have any, I gave it a pass. You can also add cashew or soaked almonds and you can omit the cream later.) cook till it becomes soft. Allow it to cool down and grind into a paste along with the Mawa.

Add Butter to the same pan and add the paste, add turmeric and chili powder and saffron. Let it cook for 5 minutes and the color will change to a deeper color. Keep stirring occasionally. Add some water if required. Add 3 tablespoon of fresh cream and the kasturi methi. Let it cook for a couple of minutes.

Add grilled paneer cubes. I have not used any oil or butter and grilled it on a pan.

Add the grilled paneer to the curry. cook it for a minute or 2.
Add salt. To garnish, you can add a little cream some Kasturi methi.
