Danish Cheesecake Squares

I’ve been looking for ideas of things to make–I even mentioned something on Facebook about how I wanted suggestions for cooking/baking projects this weekend. My mom was babysitting some of my nieces/nephew(s), and mentioned she made Danish Cheesecake squares for the kids. I asked for the recipe (it sounded familiar), which she gave me, and then I recalled her making in back in the day. It’s been ages since I’ve had it, but lucky for me, I happened to have most of the ingredients in the fridge! And I thought it would be a decent breakfast.

Danish Cheesecake Squares Recipe

Ingredients

2 8 oz. packages crescent roll dough
2 (8 oz.) packages cream cheese (softened)
¾ C Sugar
1 large egg
1 tsp. vanilla
1 tsp. cinnamon

Instructions

Preheat oven to 350 degrees F.

Beat cream cheese, sugar, egg, cinnamon and vanilla in a medium mixing bowl. Set aside.

Unroll 1 package of dough on cookie sheet and pinch perforations together. Spread cream cheese mixture on top. Unroll 2nd sheet of dough on top and pinch perforations. Bake 20-25 minutes. Cut into squares to serve.

You could also use a 9 X 13-inch baking dish rather than a cookie sheet to make this in. Just make sure to grease the baking dish if you go that route.

I have nothing on today’s agenda…Other than hanging out with the bambino and more laundry. There’s always more laundry to do! I might draw up a menu or start in on another book…Or let’s just be honest…I’ll putz around on the internet all day (in between loads of laundry)!
