Hello everyone.

The quince has unfortunately fallen quite into oblivion and the people who still have a quince tree either shy away from processing it or cannot cope with the harvest quantities. Lucky for those who are looking for quince, because these people are happy to give away some of the harvest.


Today I would like to tell you a trick that makes processing much easier. Especially if you want to process the whole fruit instead of just extracting juice or jelly and then dispose of the fruit - which would be a real shame.


Anyone who has ever processed quinces knows that it takes a lot of effort to cut the fruit. If you want to remove the core, you have a lot of work to do. There are also small stones around the core that make the work even more difficult. You don't want them in your jam or fruit puree.

You can see them in this picture if you look closely.


But there is a trick that can help:

Remove the down from the fruit and quarter it lengthwise. Then remove the blossom and the stalk - I also take out the brown seeds. Then boil the fruit in water or juice until the flesh is soft, after which you can easily remove the hard core with a fork and/or spoon. Ideally, you should have let the fruit cool down beforehand.


Now you have the possibility to process everything. I maybe also post a quince recipe soon.

Hallo allerseits.

Die Quitte ist leider ziemlich in Vergessenheit geraten und die Leute, die noch einen Quittenbaum haben, scheuen entweder die Verarbeitung oder können die Erntemengen nicht bewältigen. Glück für diejenigen, die Quitten suchen, denn diese Menschen geben gerne etwas von der Ernte ab.


Heute mag ich Euch einen Trick verraten, der die Verarbeitung deutlich vereinfacht. Vor allem wenn man die ganze Frucht verarbeiten möchte, statt nur Saft oder Gelee zu gewinnen und die Früchte dann entsorgt - was wirklich sehr schade wäre.


Wer schon einmal Quitten verarbeitet hat, der weiß, dass es ein sehr großer Kraftaufwand ist die Früchte zu teilen. Wer nun noch das Kerngehäuse entfernen möchte, der hat dann richtig zu tun. Um das Kerngehäuse befinden sich zudem kleine Steinchen, die die Arbeit noch erschweren. Diese möchte man auch nicht in der Marmelade oder im Fruchtmus haben.

Auf diesem Bild kann man sie erkennen, wenn man genau hinsieht.


Aber hier kann ein Trick Abhilfe schaffen:

Man entfernt den Flaum von der Frucht und viertelt sie der Länge nach. Dann entfernt man die Blüte und den Stiel - ich nehme auch noch die braunen Kerne heraus. Dann die Früchte in Wasser oder Saft kochen bis das Fruchtfleisch weich ist, danach kann man das harte Kerngehäuse leicht mit einer Gabel und/oder einem Löffel herauslösen. Im Idealfall hat man die Früchte vorher abkühlen lassen.


Nun habt ihr die Möglichkeit alles weiterzuverarbeiten. Ich werde vielleicht auch noch ein Quittenrezept posten.

Dein Werk & Skill finde ich immer wieder cool und finde solch Aspekte von Lifestyle auch transportwürdig. Müssten viel mehr Leute machen - hat doch viele positive Aspekte... Welch Glück, ein paar geeignete Quadratmeter hegen & pflegen zu dürfen!

Thank you and please excuse me for disappointing you.😢 I wasn't sure at this time, if I would post anything else about quince, thats why I wrote "maybe".😉 I am now processing and the recipes and ideas will not just be about quince-jam. I will link the post then. Please trust me, it will be clearer then.😉
