Pickle of Cucumber, Onions and Garlics (ENG) (ESP)

I like to prepare all kind of pickles at home to use them when I make hamburgers or just to eat them with bread and arepas. They are very easy to make, you only have to use your imagination and make many combinations of vegetables. In this recipe I am using cucumber because is very difficult to find gherkins in Venezuela.

You can make this pickle raw or you can cook it few minutes. If you do it raw it will take more time to preserve because the skin of the cucumber is a bit hard, but if you cook it a bit you can enjoy it in a week time. I make it both ways, some raw that it will take more than a month to preserve and the cooked one to eat it in a week time.

I add onions and garlic to this pickle because it gives a very nice taste to the whole preparation. It is easy to make and it hasn't contain many ingredients and the result is a very enjoyable product. You can make big quantities and sell them to your friends or you can give them as a present. I have a big family so, we ate it at home all the production.

You will need the following ingredients to prepare 5 jars:

  • 5 cucumbers
  • 2 onions
  • 1 garlic head
  • 1 cup of vinegar
  • 2 spoons of sugar
  • salt
  • some peppers
  • 1 liter of water
  • 5 sterilized jars
  • clean cloth

Preparation:

  • With a fork mark strong lines along the cucumber to create a decorative pattern in the slices cut
  • Wash them before cutting

  • Cut the onions and garlic in slices as well

  • Boil the water together with the sugar, salt at taste, and 1 cup of vinegar in a steel saucepan
  • Add the cucumber slices and cook for 2 minutes

  • Add the onions and garlic and boil for 1 minute

  • Fill the jars and add a teaspoon of salt, some black peppers and more vinegar to each jar before placing the lids

  • Store in a dark place for the time you consider. It can last for a year if you preserve.

Me gusta preparar todo tipo de encurtidos en casa para usarlos cuando hago hamburguesas o simplemente para comerlos con pan y arepas. Son muy fáciles de hacer, sólo hay que usar la imaginación y hacer muchas combinaciones de verduras. En esta receta estoy usando pepino porque es muy difícil encontrar pepinillos en Venezuela.

Puedes hacer este encurtido crudo o puedes cocinarlo unos minutos. Si lo haces crudo tardará más en conservarse porque la piel del pepino es un poco dura, pero si lo cocinas un poco puedes disfrutarlo en una semana. Yo lo hago de las dos maneras, uno crudo que tardará más de un mes en conservarse y el cocido para comerlo en una semana.

A este encurtido le añado cebolla y ajo porque le da un sabor muy agradable a toda la preparación. Es fácil de hacer y no lleva muchos ingredientes y el resultado es un producto muy agradable. Puedes hacer grandes cantidades y venderlas a tus amigos o puedes regalarlas. Yo tengo una familia numerosa así que, comemos en casa toda la producción.

Necesitarás los siguientes ingredientes para preparar 5 tarros:

  • 5 pepinos
  • 2 cebollas
  • 1 cabeza de ajo
  • 1 taza de vinagre
  • 2 cucharadas de azúcar
  • sal
  • unos pimientos
  • 1 litro de agua
  • 5 tarros esterilizados
  • un paño limpio

Preparación:

  • Con un tenedor marcar líneas fuertes a lo largo del pepino para crear un patrón decorativo en las rodajas cortadas
  • Lávalos antes de cortarlos

  • Corta también la cebolla y el ajo en rodajas

  • Hervir el agua junto con el azúcar, la sal al gusto y 1 taza de vinagre en una cacerola de acero
  • Añadir las rodajas de pepino y cocer durante 2 minutos

  • Añadir las cebollas y el ajo y hervir durante 1 minuto

  • Llenar los tarros y añadir una cucharadita de sal, un poco de pimienta negra y más vinagre a cada tarro antes de colocar las tapas

  • Guarda en un lugar oscuro durante el tiempo que consideres. Puede durar un año si lo conservas.

Your pickle is very good, I also make pickles at home and add some chickpeas to make it easier to ferment. When add chickpeas, it seems to be getting like the fermentation is a little better. 😊
