Sour Red Cabbage with Apples and Sausages

I love red cabbage because it is a vegetable full of vitamins, minerals and antioxidants. It gives you good health and strength. You can prepare it in many recipes raw or cooked together with fruits and another vegetables. In this case, I am going to prepare it with apples, and it is a rich accompaniment to roasted pork or you just can eat it alone with bread.

It has no difficulty to prepare it, but you have to cook it slowly being careful not to burn it. The only thing you have to do is to cut all the vegetables and then adding it to a big pan where you are going to cook it, This time I will add sausages of good quality , but you can omit them.

To prepare this recipe you will need:

  • 1 red cabbage
  • 3 apples
  • 1 white onion
  • 1 red pepper
  • 4 medium sausages
  • 1/4 cup of vinegar
  • olive oil
  • 1/2 cup of brown sugar
  • 1 teaspoon of cinnamon

Procedure:

  • Finally cut the cabbage removing the center and all the white parts

  • Cut the onion and the red pepper in slices

  • Cut the apples in slices and bathe with lemon to avoid oxidation

  • Cut the sausages in small pieces

  • Place a big saucepan on the fire and add the onion and the red pepper with olive oil and saute without burning

  • Add the cabbage and keep frying

  • Add the slices of apples

  • Add the brown sugar and the cinnamon

  • Finally add the sausages and the vinegar, stir and cover with the lid. Low the fire and cook for 1 hour checking all the time it doesn't burn

Don't wash the cabbage, the only water you will need is the one from the same vegetables that is why you will cook it slowly. Eat cold, you can keep it in the refrigerator for 1 week. I hope you enjoy it.
