Cooking Blog: Pinakbet For Our Lunch

Hello, how are you? Whenever we ate a straight day of meat dishes, we always washed those meats away with a vegetable dish like Pinakbet, so whenever we felt the guilt of not eating enough vegetables, this dish is one to cook.
Pinakbet is one dish that is never missing on a ilocano family in weekly market specially us, who need to eat more vegetables because we us human need to eat vegetables once in a while specially us who are not young anymore LOL.

- Cooking Oil
- 4 Cloves Garlic
- 2 Red Onion
- Ginger
- 5 Tomato
- 2 tbsp. Fish Sauce
- 2 cups Water
- 1 Chicken Broth Cube
- Okra
- Long String Beans
- Thai Eggplant
- Green Chilis
- Small Bittergourd
- Bagbagkong

In a pan, I added two tablespoons of cooking oil, and then I added the leftover chicken as "sahog" because we ran out of meat LOL.
Cook it until some crispy part on the meat.
And then I added aromatics like garlic, red onion, and ginger. Cook it for about a minute until the aroma comes out.
Then I added the tomatoes. I cooked them until the texture of it turn into a mush.
We ran out of Bagoong, so I used fish sauce. I added about two tablespoons of it.
After that, I added two cups of water.
For the flavor, I added one chicken broth cube into the water.
When it started boiling, I added the okra first because sometimes these vegetables needed to cook longer.
I added the long string beans next. These needed to be cooked longer too.
After that, I added the Thai eggplant.
Then I added a bunch of green chilis.
And lastly, I added the bittergourd and bagbagkong.
Cook it for about 7-10 minutes on high-medium heat.
Serve hot and plated.

Yummmmmm! Ehhhh, Bagbagkong, hinahanap ko kung ano yun, ampalait pala. But i love this version of yours. Kakagutom! Sarap nito partner sa rice tapos tinapa or tuyo
