Today I want to share with you a totally vegetarian recipe, many times we limit ourselves because we don't have animal protein, but there are vegetarian options that have nothing to envy when using meat. I almost always make meatballs with ground beef, but today I dared to make them with eggplant and I really liked the final result; I share with you this very healthy recipe.
Hoy les quiero compartir una receta totalmente vegetariana, muchas veces nos limitamos porque no se tiene proteína animal, pero hay opciones vegetariana que no tienen nada que envidiar al usar carne. Casi siempre realizó albóndigas con carne molida, pero hoy me atreví a realizar con berenjena y la verdad me gustó mucho el resultado final; les comparto esta receta muy saludable.

2 eggplant
1/2 onion
4 cloves of garlic
Garlic powder
Pepper to taste
Salt to taste
Oil for frying
100 grams of wheat flour

Step 1
Paso 1
The first thing I did was to take the eggplants and remove their skin, wash them very well and grate them on a cheese grater on the coarse side. Then place the eggplant in another container with water and salt, to remove the bitterness. Let it stand for 15 minutes and then remove the excess water, and reserve.
Lo primero que realice fue tomar las berenjenas y quite su piel, lave muy bien y ralle en rallador de queso por la parte gruesa. Luego coloque la berenjena en otro envase con agua y sal , para quitar lo amargo. Ahí deje reposar por 15 minutos y luego quite el exceso de agua, y reserve.

Then take the 1/2 onion, cut into small pieces, as well as the 4 cloves of garlic. Add oil and brown these two ingredients a little.
Posteriormente tome la 1/2 cebollas, corte en pequeños trozos , así como los 4 dientes de ajo. Coloque aceite y lleve a dorar un poco estos dos ingredientes.

Once the onion is browned, add the eggplant and join all the ingredients, until all the ingredients are united in flavor.
Una vez dorada la cebolla, coloque la berenjena y uni todos los ingredientes, hasta ver qué todos los ingredientes se unieran en sabor.

In another container place the eggplant, together with 100 grams of wheat flour, salt, pepper and garlic powder. Mix everything together to form a dough to make the meatballs.
En otro envase coloque la berenjena, junto con los 100 gramos de harina de trigo, la sal, pimienta y ajo en polvo. Uni todo , hasta formar una masa para armar las albóndigas.

Paso 5
Take a portion in my hand and roll it into a ball, then roll it in yellow flour seasoned with salt, pepper and garlic powder. This flour will make it crispy on the outside.
Tome una porción en mi mano y realice una bolita, para luego pasarla por harina amarilla que sazone con sal, pimienta y ajo en polvo. Está harina va a permitir que quede crocante por fuera.

Paso 6
In a frying pan with oil, add the meatballs and let them brown on all sides.
En un sartén con aceite incorpore las albóndigas y dejé dorar por todos lados

Eggplant is my favorite and i'd love to try this. I noticed you didn't use egg, I like mine with egg 🤔 maybe I should try it too. Now i'm really craving for this, can I have two piece of that please 😚🤩
Greetings, I didn't want to put egg, I wanted a totally vegetarian recipe. And I liked it just adding these ingredients. It is soft on the inside and crunchy on the outside because of the yellow flour.
