Delishhh! Antipasto with very Garlicky Flatbreads

Who can resist the smell of freshly baked bread that's just come out of the oven?

Not me for sure; all I need is butter melting into that slice of hot bread, a cup of dark roast filter coffee, and I'm in seventh heaven.

But when you start kneading that bread a little too close to lunchtime, a gal has to come up with
a plan, not so!
How about stealing some of that mock sour bread dough and making flatbread, even though it was a first for me; lunch will just be a little late but I was going to make it special.

Instead of scratching through my old recipe books, I headed straight to granny google for advice.

All I needed to do was shape the dough into little round balls, dust the surface with flour and roll them out thinly with a good old-fashioned rolling pin. Cover loosely with cling wrap and leave to rest so it can rise a little.

While the flatbreads are proving, prepare the crushed garlic, diced parsley & herb butter by melting, to brush over the flatbreads.

Cook flatbreads in a hot heavy-based skillet in a very thin layer of Olive Oil till it starts bubbling and is brown underneath, then turn and cook for at least a further 3 minutes.

Turn around again and brush the bubbly side with the garlic butter, turn and cook quickly to slightly brown the garlic.
Lots of tossing and turning went on at this stage.

Keep the flatbreads warm until they're all done.

I quickly threw together an antipasto salad to serve with the flatbreads by opening cans and bottles of - smoked mussels, chargrilled red peppers and sunflower seeds preserved in garlic & vinegar, sweet cherry tomatoes from the garden, feta cheese and drizzled it all with a delicious spicy Harissa red pepper paste. So quick and easy and the colours looked very pretty with the serving dish my son's girlfriend made especially for me when she was doing pottery classes!

Hubby had been in and out of the kitchen, stealing a couple of mussels and a flatbread before I could even get to present it nicely, so I had to hurry up as the man was getting hungry!

Absolutely yummy and we did not have space for even one slice of hot bread!

My friend who lost half her house in the storm needed to fetch something from one of the boxes stored in our garage, and knowing how much they enjoy homemade bread, something she is too afraid to attempt even though she's an excellent cook, I sent her home with the hot loaf of bread and made us a fresh loaf this morning. I've totally lost my appetite for the mass-produced bread that one buys in the stores, and as we don't have a good bakery close by, I often make my own bread these days.

Garlic & Herb Butter Flatbreads have me hooked and I will definitely be making this more often, but will have to control myself next time, or I'll end up the size of a house!

Yuuuum... What a coincidence as I was going to make paratha today! Inspired to do just that. Homemade bread so much better. My ovens a bit dodgy and house too cold so I gave up on sourdough for now.

I keep my sourdough starter alive but don't have the patience, so cheat by using the discarded starter when it's feeding time and add some instant yeast to it 🙃 @fionasfavourites will have me sit in detention if she hears about my cheat sourdough bread, wonder what I'll have to write out 100 times?😆

This is inspiring me to try a homemade bread. I agree, the store bought bread is very plain and not anywhere near as tasty as your recipe. Yum!

You'll never want to eat the mass-produced bread again! This was really yum. I wish we had a good bakery close by.

Is the flat bread made using normal bread dough? And how long do they need to be fried for? It looks so yummy and I need to start baking again, haven't done any for a long time since I moved before Christmas

Yes, I made it with normal bread dough. My basic bread recipe is to mix 3 cups white flour, 1 cup brown flour 1 teaspoon salt, 2 teaspoons sugar, add 1 sachet instant yeast on top. Then I mix the liquids - 2 tablespoons melted butter + 200 ml hot water + 200ml milk or greek yogurt (mixture must be lukewarm), pour on top & knead (I use my old Kenwood mixer). Let it prove in a warm place (I use my wonderbag)
There are many quicker recipes on Youtube, my favourite is Helly's Simple Recipe, she's absolutely amazing! I made her Sugarfree Banana & Raisin Buns recently, a totally different way of using yeast, and it really was so easy but divine!
I hope to see some of your baking, but can imagine how difficult moving house must be!

It's bedtime here and I'm already thinking if tomorrow and some flatbread again!
This weekend's rain caused massive damage in a little coastal village, I can't see them recovering for a very long time & the majority are holiday apartments! All around us the roads and properties have had more damage, it's quite unbelievable that we could have another severe storm so soon!

Simply delicious, light for lunch with tasty addition to normal bread.

Excellent photography and presentation on both, fortunately I don't bake nibbling fresh is too tempting!
