Loadshedding Meal Planning

Meal planning has become vitally important during our current rolling blackouts; yes, we are currently once again experiencing what is known as loadshedding, and I've been talking a little about that lately.
As our power utility have grossly neglected to do the task they get paid huge sums for, we currently have a power crisis!

At least there are schedules when the power is turned off, and this is one thing they do get right as the power is cut according to a planned schedule as regular as clockwork!
Like right now!
I'm using hubby's mobile network as my cellphone network provider doesn't maintain their battery backup and dies!

We just love a green salad and fortunately the curly lettuce is growing everywhere in the garden; one thing the marauding monkeys are not interested in!

Meatballs in the making as these can be made in advance and eaten cold with a quick salad, something that's been on the menu at regular intervals lately.
Reminds me of the days many moons ago, when picnicking in a local nature reserve, a park or at the beach, when our children were young; meatballs ALWAYS featured on the menu!
I like adding loads of parsley & a little diced fresh mint, both from the garden, as well as a grated carrot, breadcrumbs and an egg to bind it all. My favourite spice for meatballs is a teaspoon of coriander as well as crushed black pepper.

I have to work quickly so form the meatballs by hand and shallow-fry it, before the lights go out!

Delicious although slightly overdone as I was rushing about doing other tasks that require electricity.

The washing machine was working overtime to get the laundry done, water put into a flask so we can still have a cup of tea or coffee plus I had to do a quotation for a prospective guest in our bnb!

I was running around frantically as I almost forgot about the power outage!

Simple fried eggs on toast is something hubby really enjoys and is so quick to throw together.
I have a vivid imagination and the yolks look just like two eyes staring at me, accusingly, as I tend to overthink; they could have been two little chicks running around, and I'm sure my vegan friends think alike!

We do have some days when the loadshedding is put on hold, and that's when I can do a nice roast meal - lemon & fresh herbs chicken, using thyme & rosemary from the garden, left to marinade for a couple of hours before roasting on a high heat to get the skin crispy; roast potato wedges with caramelized onions, delicious roast butternut and sweet potatoes with super fresh broccoli made for a delicious meal, enjoyed by all, no candlelight dinner on this occasion;)

To end the meal, one of our favourites is stewed Granny Smith apples like Grandma made, served with custard. Something I often make when I've run out of time to make a proper dessert

I hope you've enjoyed this peek into my loadshedding meals, something that's going to be happening more often, as the power utility have failed and it would take a miracle to restore the problems at all the power stations!

I may not be very active on Hive this week, as I'll be high up in the Drakensberg by the time this scheduled post is published, but promise I'll be back and share some of the beauty of the magnificent mountains with you!

MY Stomach is churning away wanting food after seeing all yours they all look so good, but the one that caught my eye is those meatballc they look so good, Hmm maybe even meatballs and a fried Egg

Working around the power cuts must be a pain but I guess at least they are managing to stick to the schedules

Meatballs are my favourite too, but like you say, at least they are sticking to the schedules, unlike some other municipalities where the people can't plan ahead as they're not doing that!

When I was in the field I lived in places with load shedding and regular power cuts, when it was scheduled it was still frustrating but you could work around it, but like you mention in other municipalities its random its so hard to plan anything and drives one nuts

Thank you @kaerpediem, at least it's only 2 hours at a time so it's not long enough for stuff to defrost and we try to not open the fridge too often. Something to be thankful for not so😉

It seems to me that you were talking about Venezuela... 😞

Here in the country currently there is no programming, lately they leave us without power without any warning.

On the other hand, it looks very appetizing your food.

Your cooking can make vegans salivate. I am impressed with your dedication to make these amazing meals even with the power problems.

If the power goes out here in Canada for half an hour, everyone loses it. If we faced your situation the population would turn into vicious crazed monsters. Your post reminds me of how different parts of the world are.

When there is a monkey garden stealing problem I am amazed. It's a problem for you but I would love a garden and I would be thrilled to fight off monkeys hahah.

Thank you my friend! Us humans are the most adaptable of all species so one gets used to it even though it's highly annoying!
We're enjoying being in the mountains although the weather's been changing from sunny to rain & mist, but sunny weather forecast for the next 2 days. We've been walking and enjoying the stunning scenery and been visiting our favourite and famous bakery on a farm, I feel so fat after being tempted by all the divine goodies🙃

Ah thank you @edenmichelle, we're loving it here, too beautiful but I've been indulging in the most delectable cakes etc from a local farm bakery, feels like I've put on pounds in just 2 days😛

Good food Lizelle. In Venezuela, Brazil, Colombia, USA are having many outages. I don't have problems because I live near a hospital and they don't cut the electricity in those areas.
