A Special Visayan Style Vegetable Soup Topped with Fried Fish

I'm grateful I've got the chance to cook my favorite Visayan Style Vegetable Soup topped with fried fish. In Visayan Term, I called this in my hometown as Utan na Bisaya or Law- Uy. For my dinner I cooked this special soup made from fresh local vegetables like squash, okra and varieties of green leafy vegetables.

What I liked most in this Cebuano dish is that it just a light broth, a very healthy soup added with very common vegetables boiled in water.

Here are the list of the ingredients in making this special Vegetable Soup:

1/8 kilo of squash
2 pieces of okra
1 cup of horse radish
1 cup of camote tops leaves
1/2 cup of spinach
1 pc onion
1 pc ripe tomatoes
3 cups of water
Salt and pepper to taste
A piece of Fried fish

To begin with let's start following the instructions

In a pan, boil water and placed the vegetables squash and spices.

And when it boils slowly add the lady finger (okra)

Simmer it until vegetables became soft and cooked.

Check the vegetables it's soft already. Do not overcooked it, so as not to lost its nutrients. Half cooking it is also best preferred.

Finally, I tossed in spinach and camote tops leaves and added the horseradish too.

I seasoned it with salt and pepper. Serve immediately when it's hot. I prefer to pair this with steamed hot rice and topped it with a fried fish for a delicious and savory meal.
