.... by hand the more than one hundred kilos of dough, giving the pizza that human warmth that makes it unique. When I greet him I prefer to give him a high five or hug him to prevent him from shaking my hand. That pizzeria makes me feel at home. Every time I come back to Florence I stop to enjoy the smells and colours of those masterpieces. It is one of those hidden places that you only get to if someone has told you about it. One of those places that, if you walk past it, you cannot imagine that there could be the best pizza in the world in there, if it were not for the religious queue that forms at the entrance every night.
Everyone knows Elena, some know her to get a small discount, some because it is always nice to meet the 'pizzaiolo', some because, in short, she is a beautiful girl, some because they have discovered that behind so much skill lies a human being always ready to give you a smile and to love you, in the pizza she prepares all this goodness is hidden. Everyone secretly tries to express goodness, Elena has succeeded through pizza. If you are lucky enough to meet her, you will discover that this love is part of her, of her smile, of her bright black eyes, of her way of living and kneading life.
That's why I love making pizza, it helps me cultivate my imagination. A pizza can tell you things! It is certainly a way like any other to continue a story, it makes your mouth water!
The pizza and the tale, start from a white background to be filled with tomatoes or words, with emotions or mozzarella, with what comes from inside us or from the table. A tale is savoured inside, living it first and then telling it. First we find the ingredients, the emotions, the encounters, the loves in our lives and then we leave it to time to tell them to us again. A story is an attempt to give a beginning and an end to an experience, an adventure, to give meaning and dimension to what one has experienced. This story is a collection of travel notes imprinted in my heart during the last two and a half years of my life, which later became five and finally eight.
A journey I have travelled in pursuit of dreams and fears, with baggage that has become more and more essential along the way, that is, little or nothing.

.... a mano gli oltre cento chili di pasta, dando alla pizza quel calore umano che la rende unica. Quando lo saluto preferisco dargli un cinque o abbracciarlo per evitare che mi stritoli la mano. Quella pizzeria mi fa sentire a casa. Tutte le volte che torno a Firenze mi fermo a gustare i profumi e i colori di quei capolavori. É uno di quei posti nascosti che ci si arriva soltanto se qualcuno te ne ha parlato. Uno di quei posti che, se ci passi davanti, non immagini che là dentro ci possa essere la migliore pizza del mondo, se non fosse per la religiosa coda che ogni sera si forma all’entrata.
Tutti conoscono Elena, c'è chi la conosce per farsi fare un piccolo sconto, chi perché fa sempre piacere conoscere il “pizzaiolo”, chi perché, insomma, è una bella ragazza, chi perché ha scoperto che dietro a tanta bravura si nasconde un essere umano sempre pronto a regalarti un sorriso e a volerti bene, nella pizza che prepara si nasconde tutto questo bene. Ognuno cerca di nascosto di esprimere il bene, Elena c’è riuscita attraverso la pizza. Se avete la fortuna di incontrarla, scoprirete che quest’amore fa parte di lei, del suo sorriso, degli occhi neri e accesi, del suo modo di vivere e d’impastare la vita.
Per questo amo fare la pizza, mi aiuta a coltivare la fantasia. Una pizza può raccontarti delle cose! Sicuramente è un modo come un altro per continuare un racconto, fa venire come dire, “l’acquolina in bocca!”.
La pizza e il racconto, partono da uno sfondo bianco da riempire con pomodori o parole, con emozioni o mozzarella, con quello che viene da dentro di noi o dal tavolo. Un racconto si assapora dentro, vivendolo prima e raccontandolo poi. Prima si trovano gli ingredienti, le emozioni, gli incontri, gli amori nella nostra vita e poi si lascia al tempo il compito di raccontarceli di nuovo. Un racconto è il tentativo di dare un inizio e una fine a un’esperienza, un’avventura, di dare un senso e una dimensione a quello che si è vissuto. Questa storia è una raccolta di appunti di viaggio impressi nel mio cuore durante questi ultimi due anni e mezzo di vita, che poi diventeranno cinque e infine otto.
Un viaggio che ho percorso inseguendo sogni e paure, con il bagaglio che strada facendo si è fatto sempre più essenziale, cioè poco o niente.
Nel preludio di questo viaggio il lettore si renderà presto conto che ...

You have just read a page from my story as an Italian romantic songwriter. This story is the tale of a boy, between 1998 and 2002, riding in his LPG SW Regatta. It is now also translated into English and I add half a page to tell the connection after 20 years with life now.
