Fresh pork roll with braised endives

Ingrédients

  • 1 pork loin 750 grams
  • White wine 20 cl
  • Onions 1
  • Endives 8
  • Smoked sausages 2
  • Butter 20 grams
  • Thyme
  • Mustard 2 tablespoons
  • Salt/pepper

Preparation

  • Put the 20 grams of butter in the pan and let it melt, then add the pork loin and brown it for 5 minutes on each side

  • Peel and finely chop the onion

  • Remove the meat and put it in a plate, put the sliced onions in the same pan and let it melt for a few minutes

  • Add the sausages cut in four, mix with onions made to brown 5 mn

  • Rinse and drain the endives

  • Spread the mustard on the meat you have reserved

  • Put the meat back in the pan with the onions and sausages add 2 tablespoons of water and 2 tablespoons of white wine

  • Add thyme, salt and pepper place the endives on top and put a cover

  • cook on medium heat for about 1 hour after 30 minutes remove the meat and put it upside of the endives for the last half hour
