Fresh pork roll with braised endives
Ingrédients
- 1 pork loin 750 grams
- White wine 20 cl
- Onions 1
- Endives 8
- Smoked sausages 2
- Butter 20 grams
- Thyme
- Mustard 2 tablespoons
- Salt/pepper
Preparation
Put the 20 grams of butter in the pan and let it melt, then add the pork loin and brown it for 5 minutes on each side
Peel and finely chop the onion
Remove the meat and put it in a plate, put the sliced onions in the same pan and let it melt for a few minutes
Add the sausages cut in four, mix with onions made to brown 5 mn
Rinse and drain the endives
Spread the mustard on the meat you have reserved
Put the meat back in the pan with the onions and sausages add 2 tablespoons of water and 2 tablespoons of white wine
Add thyme, salt and pepper place the endives on top and put a cover
cook on medium heat for about 1 hour after 30 minutes remove the meat and put it upside of the endives for the last half hour
