Salmon/Avocado Glass Bowl
Ingredients :
- Avocado (2)
- Salmon (5 slices)
- Orange (1)
- Lime (1)
- Fresh cream (20 cl)
- Cheese garlic & herbs (1/2)
- Chives (about ten sprigs)
- Chili powder (a pinch)
- Salt and pepper
Equipment: 1 hand blender
Preparation:
Open the avocados, remove the pit and flesh, place in a bowl and add 3/4 juice of half a lime keep just a little for later.
Mix the flesh with a hand blender or a fork and add salt/pepper and a pinch of chili powder.
Blend the flesh with a hand blender or a fork and add salt/pepper and a pinch of chilli powder and the remaining juice of the half lemon already squeezed.
Keep in a cool place.
In a second bowl put the creme fraiche, add half the cheese, salt, pepper and a pinch of chili powder and mix.
Add 3 slices of salmon to the bowl and mix.
Cut the remaining 2 slices of salmon into strips and roll them up. You can use a straw to do this.
Peel the orange and cut it into small pieces.
In your bowls, pour first the creme fraiche mixture, then the avocado mixture and finally place the salmon rolls and orange pieces. Decorate with chopped chives.
