Salmon/Avocado Glass Bowl

Ingredients :

  • Avocado (2)
  • Salmon (5 slices)
  • Orange (1)
  • Lime (1)
  • Fresh cream (20 cl)
  • Cheese garlic & herbs (1/2)
  • Chives (about ten sprigs)
  • Chili powder (a pinch)
  • Salt and pepper

Equipment: 1 hand blender

Preparation:

  • Open the avocados, remove the pit and flesh, place in a bowl and add 3/4 juice of half a lime keep just a little for later.

  • Mix the flesh with a hand blender or a fork and add salt/pepper and a pinch of chili powder.

  • Blend the flesh with a hand blender or a fork and add salt/pepper and a pinch of chilli powder and the remaining juice of the half lemon already squeezed.

  • Keep in a cool place.

  • In a second bowl put the creme fraiche, add half the cheese, salt, pepper and a pinch of chili powder and mix.

  • Add 3 slices of salmon to the bowl and mix.

  • Cut the remaining 2 slices of salmon into strips and roll them up. You can use a straw to do this.

  • Peel the orange and cut it into small pieces.

  • In your bowls, pour first the creme fraiche mixture, then the avocado mixture and finally place the salmon rolls and orange pieces. Decorate with chopped chives.
