La Reina en la mesa en Navidad en los hogares venezolanos es la tradicional hallaca. Esto ha cambiado en grandes rasgos, pero aún muchos hacemos el esfuerzo económico y de preparación a pesar de las experiencias que venimos experimentando desde hace varios años.
En mi caso, era tradición desde niña ver a mis padres organizarse para reunir los ingredientes para su preparación, no hablo de 30 hallacas como hacemos en varios hogares sino de 150 para arriba, recuerdo que mi papá el mismo se encargaba de las hojas de plátano y las preparaba (pasarlas por candela para suavizarlas) llenar el frezzer de carne de res, cochino, pollo...las aceitunas, pasas, alcaparras era fácil de obtener, en fin se preparaban para que todos colabaráramos en ese proceso, ahh otra cosa, se hervían en un fogón de leña.
Al crecer, ya cada quien en sus actividades de trabajo y universidad, era común reunirnos en el mes de diciembre y realizar el trabajo, mi papá con su sonrisa nos preguntaba: ¿cervezas? y nosotras siiii...mi madre con su conocimiento que traía acerca de la preparación aprendido de sus ancestros indicaba el procedimiento.
Ahora, todo cambió...hasta unos 7 años dejamos de reunirnos en casa de mis padres, se tomaron destinos diferentes fuera del país, luego la pandemia y cada quien en su casa resolvía si hacía o no. en mi sitio de trabajo las encargaba no me enfrentaba a este trabajo, fue hasta hace 4 años que lo retomé...porque salió mi hija del país, pero cuando salió mi hijo mi esposo quedó por el suelo...decía yo comeré lo que se haga, apagaré las luces y me acostaré a dormir, al escuchar esto dije: no señor, haremos hallacas...eso hizo que la tristeza de mi esposo y la ausencia de mis hijos se disipara algo.
De acuerdo a lo anteriormente escrito, nunca fuí de realizar este trabajo sola...me armé de valor y fuimos comprando paso a paso los ingredientes, siempre resalto que la cocina es un arte y cada quien le da su toque personal en las recetas que decide preparar. Que si lleva, que si no lleva...y digo lo importante es que sepa a Hallaca.
2 kilos de maíz en concha
1 kilo de carne de res
1/2 pechuga de pollo
1/2 kilo de cochino aproximadamente con un poco de tocino
1 pimentón
4 cebollas pequeñas
2 cabezas de ajo de tamaño mediano
Perejil, cilantro, otros
150 gramos de aceitunas
150 graos de pasas
100 gramos de alcaparras
Onoto en granos para hacer el aceite onotado(este se hizo poniendo a calentar a fuego muy lento aceite, cuando se considera que está caliente coloca una cantidad prudencial de granos de onoto, espera que repose y cuela, lo mantiene en frasco de vidrio)
Hojas de plátano 2 1/2 kilo aproximadamente
Sal y especies al gusto(usé cúrcuma, ajinomoto, comino)
Hilo pabilo
Para la preparación se usó:

El procedimiento fue un poco accidentado, porque mis tareas las hacía al momento para ir adelantando, el limpiar las hojas se encargó mi esposo se distrajo mucho y se le enredó el tiempo con la actividad de moler el maíz en concha, salcochado para hacer la masa. Bueno esto es parte de la anécdota. Mientras el molía, preparé el guiso, amasé cuando había masa molida, armé...menos mal que cuando terminó de moler se sentó a realizar el amarre de las hallacas.
Un compañero que no debe faltar.

Aquí la ilustración del proceso.
En la molienda, cebolla, ajíes, pimentón, ajo, montes ya picados.

Un compañero que no debe faltar.
(Hasta esto cambió, antes era otro tipo de bebidas)
Comencé con la carne de res,pollo,cochino, por último los montes.

Ya listo el guiso la tradición es probarlo con casabe que no debe faltar. Pasó la prueba.

The Queen at the table at Christmas in Venezuelan homes is the traditional Hallaca. This has changed in broad strokes, but still many of us make the financial and preparation effort despite the experiences that we have been experiencing for several years.

Now, everything changed ... up to about 7 years we stopped meeting at my parents' house, different destinations were taken outside the country, then the pandemic and everyone at home resolved if they did or not. in my workplace I ordered them, I did not face this job, it was until 4 years ago that I took it up again ... because my daughter left the country, but when my son left my husband was on the ground ... he said I will eat what let it be done, I will turn off the lights and go to sleep, when I heard this I said: no sir, we will do Hallas ... that made the sadness of my husband and the absence of my children dissipate somewhat.
According to what was previously written, I never did this work alone ... I steeled myself and we bought the ingredients step by step, I always emphasize that cooking is an art and every who gives his personal touch in the recipes he decides to prepare. The procedure was a bit bumpy, because I did my tasks at the moment to get ahead, cleaning the leaves was in charge, my husband was very distracted and time was entangled with the grinding activity the corn in the shell, salted to make the dough.
