Chinese Chicken Vegetable Soup 🍲🥕🥬 - Chab Chai

Hello all my dear friends, today I decided to make a hot Chinese vegetable soup with chicken. In Cambodia, my family never fails to prepare the Chap Chai dish during Chinese New Year. It’s a unique combination of ingredients certainly makes it a great start for the New Year. This soup is extremely delicious! It’s a super simple recipe and it’s perfect to make at home, as it contains affordable, nutritious, and flavorful ingredients.

Ingredients ✍️

  • 2 small carrots, roll-cut into 3-inches.
  • 500g of white radish
  • 1 medium head cabbage, chopped
  • 500g of kale
  • Salt and black pepper to taste
  • 1 tbsp plus 2 tbsp of soy sauce
  • Oyster sauce
  • 2 large green onions, finely chopped
  • dries pig skin
  • dries bean curd
  • dries shrimp
  • dried shiitake mushrooms
  • dried black fungus
  • Chicken

Directions

Step 1

Soak dried mushroom for one hour with hot water. Remove mushrooms stem, squeeze out excess water. Marinate mushroom with 1/2 tsp of salt.

Step 2

Soak black fungus in cold water about 20 minutes. When it turns softened, drain it well. Remove the hard portion on the underside of the fungus. If it’s too big, cut into half or 1/3.

Step 3

Marinate the chicken with seasoning. I add 2 tablespoon of fish sauce, 1 tablespoon of soy sauce, 1/2 tablespoon of salt, 1/3 tablespoon of black pepper, and 1/2 tablespoon of sugar. I don’t add much sugars because I put a lot of vegetable like carrots so it will bring the sweetness to the soup.

Step 4

Adding 1 tablespoon of oyster sauce to make it more flavorful and smoother. We mix all the ingredients with chicken together until we get a smoothly combination.

Step 5

After we mix our chicken for 3-4 minutes, transfer the mixture of ingredients to cook. First heat the oil in a large pot. When the pot is getting hot, add the garlic that we also cut into the pot, we keep fries it around in the oil until it fragrant and turn brown.

Step 6

Waiting until it boiled hard, and we stir it well.

Step 7

Put 4 cup of water into the pot with medium heat, simmer it until the chicken is cooked.

Now, the soup is boiled and the chicken is cooked.

Step 8

Seasoning 🧂 with salt and pepper to taste.

Step 9

After that we add our carrots and white radish, stir until carrots and white radish lose their crunch and fully cooked, 3-5 minutes.

Step 10

Transfer the kale into the pot (cut into long enough pieces and split in 2 or 4 pieces, rinsing them with water.

Step 11

Add the chopped cabbage and continue cooking until the cabbage becomes soft.

Step 12

Let it boil then cover the pot with a lid. Let it simmer for about 10 minutes.

Check the vegetables to see if they are done. When they are, our soup is done ✅.

Soup is really a meal for us! A big bowl is so satisfying!

Chinese vegetable soup, a tasty and easy way to include more veggies into your diet. It’s comforting, super flavorful and made with extra healthy ingredients which is perfect for breakfast

You can also customize it with your favorite ingredients, so it really is an amazing dish to make if you have some leftover vegetables in the fridge that you don’t really know how to used it for.
