Crispy Fry Fish with Delicious Tamarind Sauce - Sweetness and Sour Dipping sauce
Greetings to all friends of Foodies Bee Hive! Today I am back with a special recipe to share with you. It is crispy fish dipping with tamarind sauce. In my country we calls “Trey Bompong Terk Ampel Tom”.
This recipe can be made with any white-fleshed fish as you prefer or available at you local. I also make a homemade dipping sauce which is garlic tamarind sauce that has a deep sweetness and sour.
INGREDIENTS ✍️
- Fish
- Tamarind paste
- Herb
- Fresh green lettuce
- Green onion
- Garlic
- Chili
INSTRUCTIONS 👩🍳
STEP 1
Rinse fish under cold tap water to wash away blood and loose scales.
Place the catfish fillets in a wide bowl and cover with 3 tablespoon of salt. As we don’t remove the fish skin, we have to soak it with salt.
Let it soak for about an hour (although even 30 minutes will help to clean the skin)
STEP 2
In this fry, you can use any type of oil. You don’t need a whole skillet of oil to fry catfish. It is usually done in a skillet (cast iron works well!) with about a half-inch.
Remember to pat dry the fish using paper towels in order to ensure the salt could sticks well with the catfish skin.
Heat oil in skillet over medium-high heat. Oil is ready when it shimmers.
Add about 2 tablespoon of salt. Gently lay each fish down into pan so as not to splash hot oil out of skillet.
Do not move fish while they are cooking, let it cook for 1 minute, lower heat to medium.
Fry for 4 more minutes then, when it is time to turn the fish over use tongs and a spatula to carefully turn the fish over. Fry for 5 minutes on other side.
Note: Once the fish is in the skillet, you should never cover it because if we do that, we can’t check it clearly which can make our fish burn.
When the fish is cooked, set it aside and we have to prepare the sauce.
Make Tamarind Sauce
STEP 3
Immediately transfer garlic to the pot when the oil is very hot. Stir the garlic in the pot, garlic turns browns quickly so be careful not to scorch it.
As soon as the garlic is lightly golden, turn-off the heat. The hot oil will continue frying the garlic to a golden brown.
STEP 4
Now, add the seasoning. I add about 1 tablespoon of fish sauce and 1/2 cup of sugar.
Next, transfer the tamarind paste into the pot. I use about 2 tablespoon of tamarind paste.
Continue stir it with garlic over medium heat.
Stir-fry the garlic and tamarind over medium heat until it goes well with the seasoning, approximately 3-4 minutes.
STEP 5
The following step, put the chopped green onion into the pot and stir it together about 2 minutes more.
