Yummy Sweet Caramelized Pork Belly With Green Kale 🥘🥬🍚

This dish is very comforting, sweet and a little salty, which goes so well with a bowl of jasmine rice. In my country we call it “Khor Sach Jruk”. Normally, caramelize pork belly is only made with hard boiled eggs but for my family tradition we always add some vegetable. What I like about this recipe is it is fairly simple and easy. The hardest part, for me at least, was the waiting while the pork is cooking which takes more than 30min to get that tender melt-in-your-mouth meat, but the wait it was definitely worth it. Now, let’s cooking together!
🛒 INGREDIENTS
Pork belly 2Kg
Hard-boiled eggs 10pcs
Green kale 1Kg
sugar 3tbsp
Ginger 1pc, Garlic 3pcs, Pepper 1tbsp
Chicken powder 1tbsp
Fish sauce 2tbsp
Oysters sauce 3tbsp
Soy sauce 2tbsp
Salt 1tsp
Green onion
Chervil
PREPARATION / METHOD
Step 1
Marinate the pork: combine with sugar 3tbsp, salt 1tbsp, soy sauce 2tbsp, chicken powder 1tbsp, fish sauce 2tbsp, oysters sauce 2tbsp and a cup of water together in one bowl. Mix the seasoning with the pork belly together, mix it well until sugar is dissolved and then we need to leave it in the refrigerator for one night.
Step 2
Cook the liquid mixture: After left it for one night, pour the liquid mixture of pork belly into the pot, add 2 more liters of water over medium-high heat.
Prepare the Green kale 🥬: While waiting for the pork to get tender, we should prepare the vegetable. First thing we need to do is wash the kale, wash it well then we start by stripping the leaves off of the stems. You can totally cook with the stems too.
Step 3
Cook the eggs: After boiled the eggs for 4 min, bring it the Caramelize cooking pot, then lower the heat to a simmer.
Step 4
Kale stems: I like to add about 1 cup of water for every 20 minutes since the water become less when we boil it for long minutes and the high heat under it. After we put all the eggs into the pot, we wait the eggs to turn a little brown, let’s put the kale stems.
Step 5
Add Kale leaves: Boil the kale stems for 2-3 minutes then put the kale leaves and mix it together.
Step 6
Boil over medium heat: Boil it for 5-7 minutes.
Step 7
Add the the Chervil and green onion on top: put it on the recipe after put the dish in the bowl 🍲 so you can smell more delicious.
The best Caramelize pork belly. Traditionally, my family marinate the pork and leave it covered in the fridge overnight which enriches the dish with complex flavors before we start to cook it over the heat.
