Pastry chef for a day: lactose-free orange Plumcake

How many of you are lactose intolerant?

And how many of you, as me, no longer digest even a drop of milk added to a white coffee, despite not being lactose intolerant?

I think that this condition is spreading a lot in the European population, especially in Italy, and the causes can be various: excessive consumption of dairy products since childhood (milk, cheese, mozzarella), use of industrial products and perhaps not of excellent quality.

In our daily routine, my husband Mike and I are very attentive to our lifestyle, and in particular to our diet, we buy fruit and vegetables from local producers and we prefer low-calories local products (mostly without sugar) and non refined-flours.
In my spare time, however, I love to cook and prepare new recipes.

Therefore, today I will present you my recipe for a delicious dessert to be enjoyed at breakfast (if there is any left... my husband finished it in the evening, the last time) with the family over a good cup of coffee or herbal tea (such as in my case, that I haven't drink coffee for 2 years).

So, I prepared a lactose-free orange plumcake (You remember that the consumption of oranges in this period increases your immune defences!). So when you buy some of them to make some amazing orange juice you may evaluate to sacrifice a few of them for a healthy Plumcake :D

I report you ingredients for a plumcake shape (about 9 servings)
•270 g type 2 organic flour
•80 g brown sugar
•3 organic free-range eggs
•1 sachet of baking powder
•80 g di coconut oil
•150 g greek yogurt
•juice of two oranges

Method:
1)You turn on the oven at 180 degrees.
2)In a bowl, you sift the flour together with baking powder.
3)Now, you can use a blender to beat the eggs with sugar, then you can add yogurt and oil and emulsify well.
4)you can add the liquid ingredients to the dry ones and mix until you have a smooth cream.

5)You line with baking paper a plumcake shape.

6)Pour the dough and pass it in a hot oven for 50 minutes, maybe do the toothpick test

7)Let the Cake cool down before extracting from the recipient
