It's smells like Sunday 🥣🥣🥣

Clear beef soup is part of our culinary tradition. This was and still is a traditional dish of all Slovenian families, especially on Sundays. When I was still a child, I was annoyed by the beef soup, and I avoided it if possible. When I reached my late teens, I discovered its “healing powers”. After a sleepless and partied Saturday night, homemade beef soup was just the right thing (a proper cure for hangovers 😊).

My mom still makes clear beef soup every Sunday. She says, “it’s not Sunday without a beef soup”. I’m not keeping this Saturday tradition, but we do make the beef soup quite often. Most in larger quantities and then conserve it in the refrigerator for few portions.

The preparation is easy, you only need quality ingredients. Of course, there are different recipes and each family has it’s own twist. We always prepare beef soup in the same wave and with the following ingredients below.

  • beef meat (if we have a piece of home-grown chicken, we add it as well)
  • parsley
  • onion
  • carrots
  • celery leaves
  • few small tomatoes
  • salt
  • water

Place all ingredients in cold water. Meat, parsley, celery leaves, carrots, small tomatoes, onions, and salt. If you don't have fresh vegetables, you can also use frozen ones. This time we had some fresh and some frozen vegetables.

How long does the soup take to cook? There are “several theories”, some say that it needs to be cooked for a very long time and on a very low heat, so that it boils very slowly. Others say that you only cook it for 20 minutes in the pressure pot.

We use approx. 1 kilogram of meat in 3 liters of water and cook the soup in a pressure pot for 40 minutes. We also cook it for so long so that the meat becomes very soft. We clean the meat (from the fat) and cut it into small pieces. We add fresh onion, vinegar, and pumpkin oil. A great meat salad.

My wife likes plain soup, while I like to add some homemade noodles. This time I was lucky since my mother made them for us 😊.

We all like that the beef soup with noodles is quite hot, so you eat it very slowly and savour the full taste. If you wish you can add some fresh ground pepper. A small bowl of soup for entrée and a little bit of meat salad for main dish – simple and delicious dinner! Bon appetite!

My wife has a condition whereby her body does not produce enough collagen. We make a similar soup in a similar way. I'll use tail and shin (good and cheap here) and most of the same veg.
I tend to brown off the meat, then cook the veg a little in the same pan. Then the meat goes back and a slow overnight cook & it's ready.
Becuase the beef and veg have that initial sear it is a darker soup, but delicious.
Tho I've never tried it as a hangover cure.

Hi @stuartcturnbull, very interesting. Practically the same ingredients, but a different way of preparing the dish. Next time I will make the soup your way! I wish your wife all the best! As for the hangover, just try it 😉
