Greetings Hivers, in recent days I posted a photo in a @dbuzz Contest in which we were invited to share a picture of a cake with the hashtag #dbuzzbake. At that time I commented that I had tried making the cake without eggs because of a food allergy my baby has.

In the comments of the post @goodindigene and @charie asked me about the recipe, and today I come to share it with everyone.

When my baby eats eggs, he gets rosettes on his arms and legs, regardless of the amount of food preparation or what he eats. Although he is 2 years old, when he sees that we eat things and we do not offer him, he gets upset, especially because he likes cakes, on a couple of occasions he has eaten hidden and I realized that I had to find a way to make special cakes or pies for him.

Searching the internet, I found a publication in which they explained how to substitute the egg in dessert preparations (if you want to read the article you can go to this link), and from there I took an option in which they use one tablespoon of baking soda plus one tablespoon of vinegar for each egg required by the recipe.

I also tried a recommendation I was given to substitute the egg for a preparation made with one tablespoon of water plus one tablespoon of cornstarch for each egg required in the recipe.

With these previous indications, I give you the details of the original recipe, taking into consideration that I made these substitutions so that the baby could eat it.

  • INGREDIENTES / INGREDIENTS:

  • 1 1/2 taza de harina de trigo
  • 1 taza y 4 cucharadas de azúcar
  • 1/4 cucharadita de canela
  • 1/2 cucharadita de sal
  • 1 cucharadita de bicarbonato de sodio
  • 1/2 taza de aceite vegetal
  • 3 bananas en puré
  • 1 cucharadita de extracto de vainilla
  • 1/2 zanahoria rallada.

  • 1 1/2 cup wheat flour
  • 1 cup and 4 tablespoons sugar
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon of baking soda
  • 1/2 cup vegetable oil
  • 3 mashed bananas
  • 1 teaspoon vanilla extract
  • 1/2 grated carrot.
  • 2 tablespoons of water and 2 tablespoons of cornstarch (to replace 2 eggs).

Although I made two cakes (on different occasions) to try the option of vinegar together with baking soda, and cornstarch as egg substitutes, I must say that I liked the consistency of the cake with cornstarch better, although I also liked the taste of the cake I made with vinegar and baking soda. At the end I show you the two photos of how the cakes turned out.

Preparación / Preparation

  • Paso 1 / Step 1:

In a bowl previously prepare the egg substitute that you are going to use.

Then place the following in the bowl where you are going to beat the cake: flour, sugar, baking soda, salt and cinnamon, mix all these ingredients and then add the prepared egg substitute.

  • Paso 2 / Step 2:

Add the oil little by little and then add the bananas, grated carrot and finally the vanilla.

Grease a baking pan with butter and wheat flour and pour the mixture into it. Bake in the oven for about 30 minutes at 300ºC.

In the following image you will see the consistency of the two preparations, on the right you can see the result of the cake I made using vinegar and baking soda as an egg substitute.

On the left, I used as egg substitute the mixture of water and cornstarch, the consistency was fluffier.

I hope you liked this recipe, I also liked the option of replacing the egg with yogurt but I haven't had a chance to try it yet.

That day we took advantage of the visit of some friends to share the cake I had made and they also brought a chocolate one to sing my birthday, so we had double cake 😋.

Thanks for your support!
