Homemade baked healthy mango cake to celebrate Father’s Day

Hello foodies!

Mango is the best part of summer season and there are many ways to have this delicious food . So here is the recipe of mango semolina cake which is healthy and delicious as well .

It is always difficult to make your father happy or pleased , they don’t expect gifts but they become happy to see our efforts and good work .

So this father day I decide to baked home made cake , as my father-in-law always likes the food which we cooked at home . He said it is not necessary that everything you make is perfect , but atleast try to make it or give it a try . You will learn something valuable .

I thought to make a cake and I saw the mangoes , I never baked mango cake so I searched for the recipe and try it . I choose a healthy cake recipe made with mango and semolina .

This is a simple recipe which we can make with homemade ingredients .

Ingredients for this cake :

• Mango 2
• semolina 1 cup
• Fresh curd 1/2 cup
• oil 1/4 cup
• Sugar 1/2 cup or depends on the taste of mango
• vanilla assense
• Milk 1 tbsp
• salt one pinch
• Baking soda 1 tsp
• Baking powder 1/4 tsp
• Dry fruits

PROCESS :

STEP 1 :

First I took 2 mango , I took kesar mango which is famous in Kutch , Gujarat . Mango was fully ripped and sweet . I peal the skin and blend mango pieces in the mixer jar and made the puree . We need only 1bowl mango puree.

STEP 2 :

Now in a vessel I mix 1 cup semolina , 1/2 cup curd and mango puree , give it a good mix and rest for 20 minutes .

STEP 3 :

After 20 minutes mix oil , sugar , one pinch salt and 2-3 drop vanilla extract into the better . Pour it in mixer jar , blend it and make a smooth paste .

STEP 4 :

At the end add 1 tbsp milk , baking powder , baking soda in the batter, give it a good mix and pour it in a microwave safe container, which I grease with oil .

Decorate it with some chopped dryfruits .

Now I baked it in microwave . For this I set the 6 minute timer and bake it .

I saw that after 6 minutes my cake was set from the corner but in the middle it is not set .
I again bake it for 2 minutes but I found it same .

So I decide to took it like this .

I put the cake for 30 min to cool down and then remove it .

Luckily I found the cake shape . Even it was not perfect but my father proudly cut it and enjoy it .

The taste was good . Everyone liked this healthy home made cake .

I remove the cake from middle and rest cake we enjoyed .

I found that I add more puree so it was not set . I also took large container. I need 6 inch but here I took almost 8 inch container. These 2 mistakes I’ll remember always and will try to bake next perfect cake .

This cake is healthy and delicious with the sweetness of mango and sugar . And the celebration like Father’s Day make it more sweet .
