Indian rice pudding recipe to celebrate my 50th food blog

Welcome to my blog again. I am glad you are here. Today I'm going to share the 50th blog of my series good food good mood. This is an occasion for celebration for me so i thought why should not share the dessert recipe with you all 😀. So i would like to share the recipe of rice kheer ( Indian rice pudding recipe).



Rice pudding is a dessert which we can enjoy on the festival, especial occasion and also on the normal days. This is a easy and tasty recipe which taste great with jalebi , puri and aalo ki sabji ( this is my favourite combination 😜).

Rice pudding (kheer) made by milk, rice, sugar and some nuts. You can use custuerd powder to make it thick. Can garnish with nuts of your choice and add saffron for flavour and colour. We can use basamati rice or normal rice. Can soak the rice for time or use instant. You can also semi grind the rice . There are many ways to make this tasty pudding. Today i wanna share my recipe 😀. Let's enjoy:



INGREDIENTS ✅

  • Milk 1 litre
  • Raw Rice 50 gram
  • Sugar 100 gram
  • Dry fruits sliced
  • Saffron strands - few
  • Custard powder 1 tsp
  • Cardamom powder 1 pinch

PROCESS ✅

Step 1 :

First boil the milk in the heavy bottom pan . I used full fat milk . After boiling simmer it for 5-7 minutes on low to medium flame and keep stirring occasionally.

Step 2 :

soak the rice for 10-30 minutes, rince the water for 2-3 times and add rice in the boiling milk.

Step 3 :

cook till rice gets soft. This process takes 10-15 minutes. Stir occasionally and collect the malai from the side and mix in the milk.

When you notice that the rice has started becoming soft and the milk is also becoming thick, you can add custard powder to it. This step is optional .
For this I had already kept 2-3 tbsp of hot milk aside.

Mix it well to avoid any lumps.

You can also add saffron in this mixture.

Now add this mixture in the pan.

After it stir continue for 5 minutes on the low flame.

Step 4 :

Now add sugar , nuts slices and cardamom powder in it.

Cook till sugar get dissolved and turn off the flame.

The best thing about this pudding is that you can enjoy it hot or cold. Both types of kheer taste well.
