Hola querida familia de Hive, reciban muchas bendiciones en este día. En esta oportunidad estaré participando en este precioso y gustoso concurso, patrocinado por la amiga @sirenahippie. Sopas tradicionales un concurso que proporciona muchos recuerdos vividos. tradición familiar.

Al hablar de las gastronomías, comidas tradicionales nuestra mente se traslada a esos ricos platos que prepara la familia venezolana, siempre conservando la tradición, el sabor , la sazón de la cocina. Habitualmente vivo en Venezuela, estado Monagas, soy de padres que se criaron en el campo, así les decimos aquí. Recuerdos a mi madre, que cada día preparaba ricas comidas en el fogón, juntos a mis hermanas disfrutábamos la tranquilidad del campo, el río, bajo un árbol , comiendo mango, ciruelas. A todas estas, la enseñanza de una madre se hace manifiesto, cada sábado o domingo, se montaba una olla grande de sopa de costilla, lagarto, o hueso de rabo, era siempre ya que mi familia se dedicaba a matar vacas, ya que mi abuela era dueña de un hato en San José del ñato, un pueblo que muy poco se conoce, vía el sur de Monagas. Disfrutábamos y ayudábamos a cocinar la sopa, pelando verduras, cambur verde, aliño. Mi mamá le gustaba cocinar con orégano pequeño, le dan un rico sabor.

La sopa que presentare a continuación su paso a paso , es la sopa de costilla, aprendí hacerla desde los 13 años, no era fácil, porque estábamos en el campo, también disgustábamos de un pequeño consomé de costilla, huesos de rabo de res y cazabe. Esos momentos eran muy emotivos y familiares. Mi mamá la prepara de manera saludable, no con onoto.

Hoy por hoy, que estamos en la ciudad, mis padres preparaban la sopa cada domingo, donde cada unas de las hermanas lleva un ingredientes y así pasar el día en familia. Lo importante de esto, que mis padres todavía están vivos y son los primeros que monta la olla para la sopa, no se pierde la tradición familiar.

When we talk about gastronomies, traditional meals, our mind goes back to those delicious dishes prepared by the Venezuelan family, always preserving the tradition, the flavor, the seasoning of the kitchen. **I usually live in Venezuela, Monagas state, I am from parents who grew up in the countryside, that's what we call them here. I remember my mother, who every day prepared delicious meals on the stove, together with my sisters we enjoyed the tranquility of the countryside, the river, under a tree, eating mango, plums. Every Saturday or Sunday, a big pot of rib, lizard, or tail bone soup was prepared, it was always because my family was dedicated to kill cows, since my grandmother owned a herd in San José del ñato, a town that is little known, via the south of Monagas. We enjoyed and helped to cook the soup, peeling vegetables, green cambur, dressing. My mother liked to cook with small oregano, it gives a rich flavor.

The soup that I will present below its step by step, is the rib soup, I learned to make it since I was 13 years old, it was not easy, because we were in the countryside, we also disliked a small consommé of rib, beef tail bones and cazabe. Those moments were very emotional and familiar. My mother prepares it in a healthy way, not with onoto.

Nowadays, that we are in the city, my parents prepare the soup every Sunday, where each of the sisters brings an ingredient and so spend the day as a family. The important thing about this, that my parents are still alive and are the first to assemble the pot for the soup, the family tradition is not lost.

A continuación los ingredientes a utilizar:

  • Un kilo de costilla de res.
  • Un kilo y medio de yuca.
  • Un kilo de auyama.
  • 50 gramos de perejil.
  • Un cebollín.
  • Una cabeza de ajo.
  • 5 Ají dulce.
  • 250 gramos de arroz.
  • Orégano pequeño ( dos puñitos).
  • Sal ( aproximadamente dos cucharadas grandes).
  • Cambur verde (6)

Here are the ingredients to be used:

  • One kilo of beef ribs.
  • A kilo and a half of yucca.
  • One kilo of pumpkin.
  • 50 grams of parsley.
  • One scallion.
  • A head of garlic.
  • 5 sweet chili peppers.
  • 250 grams of rice.
  • Small oregano (two handfuls).
  • Salt (approximately two large spoonfuls).
  • Green Cambur (6)

Paso 1

Primeramente picamos la costilla de res, en pedazo. Una vez ya picada, la colocamos en una bandeja para ser lavada, dos veces. Luego en una olla echamos agua suficiente, hasta el tope de la olla. Incorporamos la costilla y montamos la olla al fuego, después de media hora empieza a hervir.

Step 1

First we chop the beef ribs in pieces. Once chopped, we place it in a tray to be washed twice. Then we put enough water in a pot, up to the top of the pot. We incorporate the rib and we mount the pot to the fire, after half an hour it begins to boil.

Paso 2

A medida que la costilla va hirviendo, vamos picando la verdura( yuca, auyama), cambur verde en pequeño trozos. Lavamos y reservamos aparte. Del mismo modo, lavamos y picamos el cebollín, ají dulce, perejil, ajo machacado y lo reservamos.

Step 2

As the ribs are boiling, we chop the vegetables (yucca, pumpkin), green cambur in small pieces. Wash and set aside. In the same way, wash and chop the chives, sweet bell pepper, parsley, crushed garlic and set aside.

Paso 3

Después de una hora, le añadimos una media cucharada de sal y los dos puñitos de orégano pequeño, para ir dando el sabor a la sopa.

Step 3

After one hour, add a half tablespoon of salt and two small handfuls of oregano, to give the soup its flavor.

Paso 4

Luego de media hora, la costilla esta un poco ya blanda y procedemos a añadir el aliño ya picado y removiendo la sopa, para que se incorpore bien los sabores. Después de 15 minutos, le incorporamos la verduras, el cambur verde picado y seguimos removiendo la sopa. Pasados media hora le añadimos los 250 gramos de arroz y removemos siempre para que no se pegue. Aquí el arroz es opcional, (lo agregue ya que mi mamá me enseño este secreto, para que espese un poco la sopa). Aquí por la cantidad de verduras, se coloco otra olla para la sopa.

After half an hour, the ribs are a little soft and we proceed to add the chopped seasoning and stirring the soup, so that the flavors are well incorporated. After 15 minutes, we add the vegetables, the chopped green cambur and continue stirring the soup. After half an hour we add the 250 grams of rice and stir it always so that it does not stick. Here the rice is optional, (I added it because my mother taught me this secret, to thicken the soup a little). Here, because of the amount of vegetables, I put another pot for the soup.

Paso 5

Seguimos removiendo y añadiendo sal a la sopa, buscando un mejor sabor y sazón. Después de 30 minutos la sopa se ve espesa, como le gusta a la familia, tiene buen punto de sabor. Y se procede a apagar el fuego para empezar a servir.

Step 5

We continue stirring and adding salt to the soup, looking for a better flavor and seasoning. After 30 minutes the soup looks thick, as the family likes it, it has a good flavor point. And we proceed to turn off the fire to start serving.

Nuestra rica y espesa sopa de costilla de res, ya esta lista y servida. En esta ocasión va acompañada de casabe y aguacate. Y como dice mi mamá, Donde come uno, come muchos, pues me llego una visita.

¡Hola otra vez @nubra11! Gracias por participar también en este Segundo Concurso Foodies, disculpa lo tarde que vengo a comentar. Tu post me ha gustado mucho, se nota claramente cómo has recordado tu infancia y adolescencia al hacer esta receta, debe haber sido genial crecer en el campo y disfrutar de la naturaleza en su más puro estado, y tener a tu familia contigo, que bonito eso, y que aún cuando hayan cambiado de lugar de residencia, continúan conservando sus costumbres, muy hermoso eso.

Ahora bien, tu post está muy bueno, has desarrollado tu receta con cuidado, paso a paso, con detalle, cumpliendo todos los requerimientos del concurso, muy bien.
