Chia seed Cucumber Pudding Coated With Coconut Milk

Hi vegan lovers, happy activities to all of you, healthy greetings to you wherever you are.

Currently the weather in the area where I live is getting hotter and prolonged. Something refreshing is the right choice this time, I went to the market area which is only hundreds of meters not far from my house. There the sellers provide some vegetables and even fruit. I wanted to find something fun for today, so coincidentally I found a lot of cucumbers available in the small shop.

The harvest of cucumbers at the end of the month is very abundant so that many farmers are at a loss, the price offered is so cheap at IDR 4,000 per kilogram, this often happens due to the abundant harvest factor. I usually make cucumbers for various favorite foods when I feel hungry or I make fresh drinks when I feel thirsty. Well, here are the ingredients we need to prepare cucumber pudding.

The Ingredients

1 cucumber
1 sachet of gelatin powder
1 teaspoon chia seeds
1 cup thick coconut milk
1 tablespoon pandan paste
100 grams of sugar



Preparing cucumbers for pudding is incomplete without combining chia seeds, these two ingredients are very close and have the same properties to refresh the body or if you are exposed to inflamed heat so cucumber and chia seeds are very good for healing it. In processing cucumber pudding, I took several steps to make this dessert menu a dessert to eat with my family.

Steps By Steps

Step 1

Prepare one whole cucumber, then peel the skin of the cucumber and wash it thoroughly

Then grate the cucumber according to your taste, here I grating coarsely so that the cucumber is more pronounced.

Step 3

Soak basil seeds in warm water for 5 minutes so that they expand evenly.

Then put the cucumbers in the wok, add of water, stir gently until evenly mixed.

Add the soaked chia seeds to the stirred pudding cucumber.

Step 6

Add 1 teaspoon of pandan paste, so that the color is attractive and the smell of pandan is pronounced.

Step 7

Stir the pudding until it's evenly distributed so it doesn't clump, then add sugar to taste.

Step 8

Add one sachet of powdered jelly, enter slowly while stirring until evenly distributed.

Step 9

Cook using medium heat until the mixture boils, while cooking, stir the mixture.

Prepare a mold that has been washed, put the pudding mixture into the mold and leave a little pudding.

Put the pudding in the refrigerator for a while so that the pudding hardens faster perfectly.

The remaining dough, add the liquid coconut milk then cook it again and add a little pandan paste again.

The rest of the pudding mixture, cook again until it boils and stir in the coconut milk so it doesn't break

Then slowly pour the pudding into the half-hardened pudding mold

The rest of the pudding, I put it in a small mold, or you can put it in another container

Wait a few minutes for the pudding to harden and then gently remove it from the mold.

Cucumber and chia seed pudding is ready to be served, I keep it in the refrigerator for 30 minutes so that the pudding is more delicious and fresh. Well, for those of you who can't eat cold dishes, serving without cold is no less delicious, the resulting taste is also very delicious, sweet and fresh. The combination and smell of cucumber is very fragrant, adding the impression of freshness to this pudding. For the coconut milk layer, you will feel a different sensation, the bite of the combination of cucumber and coconut milk is very unique, they blend perfectly.

Actually the combination of cucumber pudding and coconut milk was my first try, I was very curious how it would turn out if cucumber was mixed with coconut milk in a pudding dish, it turned out to be very harmonious, really delicious.

I liked the idea of adding coloring, that made the dessert look more attractive.

You're right, cucumbers have a faint green texture, so I took the initiative to add pandan paste to this dessert.
