How to Make Kedondong Fruit Candied

Have you ever heard of fruit kedondong? Kedondong fruit is one of the most popular fruits in Indonesia, this fruit is one of the mango tribe. Usually this fruit is used as an ingredient to make pickled fruit salad or consumed directly. In addition, kedondong fruit has a crunchy texture and low water content and has an excessive sour taste when young. Well, fruit that is old will have a slightly different taste, more crunchy and slightly sour. Kedondong fruit is also one of the fruits that can lose weight, because it has low levels of carbohydrates and fat and has a balanced fiber content so it is suitable for those of you who are on a diet.

Besides being known as fruit kedondong, this fruit is also known in English as Ambarella, because I am afraid that the pronunciation of the name in your country will be wrong, so I still write the original name from Indonesia, namely kedondong and maybe in other areas outside my country the pronunciation will be very different . Candied Fruit Kedondong

In making candied kedondong, you must pay attention to several things when choosing fruit, namely choosing kedondong that is not too old, because it will make it taste better and crunchy. Well, if kedondong is usually made with pickles and salad, here I will make a little different, namely Candied kedondong or in my area known as "Kedondong Peujru'ek" usually the purpose of making candied kedondong is to remove the sour taste in contained And also can make kedondong more durable if stored properly.

Materials Used

The ingredients used for the manufacturing process are very easy to find, based on ingredients that are available in your kitchen so that it will speed up your preparation. Here are some materials needed:

9 pieces of kedondong
800 ml water
300 grams of sugar
8 pieces of cayenne pepper (optional)
1 tsp salt
Food coloring to taste (optional)





Step By Step

Step 1
First, peel and wash the kedondong until clean. Then cut the kedondong according to my taste, cut the whole piece still attached to the fruit to make it look natural.

Step 2
Next, boil the salt water first Give a little yellow color, then boil until the water boils.

Step 3
After boiling, turn off the stove fire and let it cool for a while then add the chopped kedondong fruit, soak it in the water for 2 minutes then drain, and discard the water.

Step 4
In the same container after I washed, I started to boil a new water, then started to grind the salt with chili,Next I add the spices in the water.

Step 5
Then I add also all the sugar and add yellow coloring to taste, then stir and cook until boiling.

Step 6
After the water boils, turn off the stove heat and let the water turn warm then just add all the kedondong fruit that has been soaked in salt water earlier.

Step 7
Stir then store in the refrigerator. This can last up to a month, the taste will not change at all, it will even be more delicious.

Serving Suggestions

The presentation of fresh fruit made differently will be more enjoyable to enjoy when relaxing, especially when served cold, will strengthen the spicy and sweet taste of this sweet. Now this candied fruit is very suitable to be served during the day, besides being able to refresh you, the combination of sweet and spicy flavors will give a distinctive aroma. I made this dish especially for me, therefore I slightly suppressed the spicy taste and reduced the sweetness a bit, because the sweet taste is too heavy I don't like it.

We call it as Ma Kok in Thai word, which referred to Olive in English word. I assume probably there are same species. 😅

Wow very good advice and of course very useful for me @sirenahippie, I will try to improve in the future. I want to tell you that kedondong in English is often called Ambarella, but for clarity, kedondong has the scientific name Spondias dulcis they are one tribe with the mango class. and they have a sour taste that's why I processed them into candied fruit which is delicious and sweet and of course it will be very enjoyed if consumed by children.
