Green Soup From Spinach and Corn

Since joining the community and being active here, I feel that being a plant-based lover is a blessing, besides having its own uniqueness in each dish, vegan menus are always an inspiration to make healthy food easy to find around us. After being around all of you for so long, I would love to participate in every community challenge, but my lack of courage to feel that my dish is still so minimal for this, with your perfect dish, really bothers me. After several times being encouraged by the community, as well as support from friends who encouraged me to express myself in this challenge and ventured to prepare dishes according to the specified theme. And I hope if there are any mistakes in my post on this challenge please give me a hint because I really need some guidance from all of you.

A very interesting theme with a unique concept is a very positive choice for me. I will follow the community theme this time, namely New Plant-Based Challenge: Make Mine Green with a special recipe from me Source of energy for Love

This positive energy and air is dedicated to my niece who has always loved the creamy texture, she is very happy with this colorful and creamy soup made of spinach and corn, the second one being her favourite. Actually my nephew doesn't like breakfast with rice in the morning, like the rest of my family. He prefers soup or porridge for his breakfast, therefore, today I present a delicious dish with his favorite simple recipe.



Ingredient

30 spinach leaves
2 pieces of young corn
1/4 onion
1 clove of garlic
Half tomato
3 green chilies
1 tablespoon cornstarch
1 teaspoon salt
2 sprigs of celery



Cooking Preparation



STEP 1I started cooking by cutting the vegetables, into several parts and trimming the spinach leaves without taking the stems.Next I cut the onions, chilies and tomatoes.

STEP 2Then I started washing and boiling spinach leaves and 1 young corn at the same time, this stew only took a moment to wait until the water really boiled.

STEP 3Then I lift the spinach stew, then I puree it using a blender, puree as smooth as possible so that the spinach texture is not visible.

STEP 4Then, I prepared a cooking pan, and started to sauté the garlic and onions until they were fragrant and browned.

STEP 5Then add the tomatoes and green chilies to the stir fry for 3 minutes until the mixture is wilted. Next, I added 1 piece of the remaining young corn pieces, this I did to highlight the corn in the soup so that my nephew couldn't get rid of this soup.

STEP 6Then add 1 cup of water and spinach leaf juice that has been in a fine blender, cook and stir gently.

STEP 7Next I added cornstarch to make my soup thick and this is the texture my niece was hoping for. Then I season with 1 teaspoon of salt, then stir and cook for 15 minutes so that the soup thickens perfectly.

STEP 8Finally, before turning off the stove, add the celery leaves, and mix well, now the green soup full of love is ready to be served.

This is a green soup offering from me to my nephew, I serve it while it's warm, because hot soup is also his favourite. Actually at first he was not a soup lover but since he got sick a few months ago we always give him soup which must be served with love for him. Well here I add a little green chili because my nephew likes the atmosphere of the taste of the dish which has a slightly spicy element, that's why I came up with the idea to add green chili so it doesn't seem too spicy for a petite woman like her, I think this is the right taste for her tongue.

And you know, if I don't eat at his breakfast he will rebel, so this is what happens I have to accompany him and we eat together and just spend a little time. For the taste produced from this soup, don't hesitate, the savory salty and slightly natural sweetness of the resulting wings is really delicious.

Hello @nurfay, it's nice to finally see you cooking and participating in our community challenge! I am very glad that you have encouraged yourself to do so, as it is a way to get to know you better, and to validate yourself in the community.

I'll tell you something, no preparation, no recipe, as long as it's made with love, honestly, is less than another; to our understanding, and from our perspective, that is so. For us, as long as it is a 100% vegan recipe and it is presented in a genuine way, by the content creator, it will be as valuable as any other.

Now, I really liked your post, since there is a story behind your recipe, plus it is delicious and nutritious. The ingredients you've used are great, baby corn is a great alternative to make it more palatable for young children like your beautiful little niece.
