Typical Acehnese Traditional Cuisine Kuah Pliek U
PLIEK U
Pliek U sauce is one of the traditional Acehnese dishes that is often used as food at certain events or days. A few days ago, at my sister's house, a thanksgiving event was held with the extended family, we also planned to make a special dish of pliek sauce for the lunch menu of our extended family who helped in the celebration. My sister and I started to prepare some of the materials needed
Ingredients Used
2 kecombrang bamboo shoots
3 flower kecombrang
1 jackfruit
1 young papaya
100 grams of papaya flowers
7 green eggplants
30 grams of cempoka
20 melinjo leave
100 grams of melinjo fruit
2 bunches of sweet potato leaves
10 green chilies
3 lemongrass stalks
7 lime leaves
30 pieces of cayenne pepper
6 cloves of red onion
4 cloves garlic
3 pieces of turmeric size 4 cm
2 tablespoons coriander
3 star anise flower
4 finger ginger
2 teaspoons salt
300 grams of small shrimp
Cooking Process

Boil the papaya flowers first, with boiling water, boil until the papaya flowers are tender and produce bitter yellow water.

Next prepare the spices and then puree with a blender, puree the spices separately with plieek u. Now for pliek u before being mashed, it should be soaked first in warm water for 5 minutes, and then puree and strain.

Then, we start cooking, to cook the pliek u sauce, because this traditional, food will be more delicious if it is cooked in the traditional way using firewood, so the first step is to boil water in a pan then add it and boil the young jackfruit for about 10 minutes.

Then enter the spices that have been ground except for the plex u, add and stir the spices evenly, wait and cook the spices for a while.
STEP 7
Now after it starts to boil again slowly add the small prawns and cook for ± 5 minutes.
STEP 8
Then enter the vegetables that have a slightly hard texture, such as long beans, cempokak and young melinjo fruit and cook again until half cooked.
STEP 9
Then add the flowers and bamboo shoots that have been boiled earlier. And stir stir until evenly mixed and the spices quickly seep into the vegetables.
STEP 10
Enter the pliek u that has been filtered, now when it is filtered here I mix it with a little water to make it easier.
STEP 11
Then cook again, wait for the pliek u to seep into the vegetables so that the sauce strengthens the taste of the pliek u.
STEP 12
Next, add the thick coconut milk from 2 coconuts, add everything slowly and wait for it to boil.
When cooking coconut milk, don't forget to stir the sauce so that the coconut milk doesn't break easily in the cooking process.
STEP 13
Finally, after the coconut milk starts to boil, add all the vegetables and pieces of green chili, salt, onion and lemongrass pieces and lime leaves. Now cook until the coconut milk boils again and the vegetables are perfectly cooked.
