Hello friend's 🤗 Good Morning from Bangladesh. I am back again with another Vegan Recipe hopefully all friends will like my Recipe. Today I will cook Gourd leaves fried with Beans and Potatoes. Many may be wondering if the leaves of the gourd can be eaten, but to be honest, it is a very nutritious and delicious food. If you eat gourd leaves like this way, you will want to eat it again and again.

Gourd leaves helps to keep the body healthy by removing constipation and besides, the leaves of the gourd contain various vitamin components including beta carotene which helps to keep us healthy. Also, it is very beneficial for various eye problems, so you must understand how important it is for us to eat it. Let's start our wonderful recipe.

  • Gourd leaves - 500 gm
  • Potatoes chop - 100 gm
  • Beans chop- 100 gm
  • Onion chop - Half cup
  • Salt - on taste
  • Soyabean oil - As needed
  • Garlic chop - Half cup
  • Green chili - on taste

There is a small vegetable garden where gourds and other vegetables are grown. I collected some Gourd leaves from there yesterday. The leaves of this gourd looked very fresh and beautiful.

Now I cut the gourd leaves into small pieces and wash them in water for a long time. Then take the gourd leaves in a sieve.

Now take the vegetables in a pan. Then I added bean chops, potato chops and green chillies.

At this stage I added salt as much as I could. Then all the ingredients were kneaded together and boiled in the oven for 15 minutes. Now take the boiled vegetables again in sieve.

In this step, I poured enough soybean oil in a pan. Then I added chopped garlic and chopped onion. After that I fried it brown colour.

Now add the boiled gourd leaves to the fried onions. After that I fried the boiled leaves for 15 minutes. Our delicious gourd leaf fried ready, now it's time to serve.
