Tomato Egg Stir-Fry

Hi dear bloggers and food lovers, have a great weekend! Today I’m going to share a comfort food dish that I often serve as a main course with warm rice. I made this dish in just 30 minutes, it’s quick. It’s simple and easy to make, and it’s also perfect for kids because it’s not spicy and has a soft texture. Okay, let’s get right to it!

Ingredients:

  • 3 eggs
  • 2 tomatoes
  • 1 clove of garlic
  • 2 scallions
  • cooking oil
  • 150 ml water
  • 2 tbsp tomato sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 3 tbsp cornstarch slurry
  • sugar and salt to taste

Instructions:

  • Crack the eggs into a bowl

  • Add salt to the bowl

  • Lightly beat the eggs and cook them in a pan with heated cooking oil

  • Fry the omelet until half-cooked

  • Remove and set aside

  • Sauté the minced garlic in the same pan

  • Add the chopped green onion stalks

  • Sauté until fragrant

  • Add the chopped tomatoes to the pan

  • Cook until the tomatoes are soft and release their juices

  • Add water to the pan

  • Once the water starts to boil, add the tomato sauce to the pan

  • Add oyster sauce to the pan

  • Add the half-cooked omelet to the pan

  • Add the remaining scallions to the pan

  • Cook until the liquid has reduced, then add salt and sugar to taste

  • Next, add the cornstarch slurry to the pan

  • Add sesame oil to enhance the aroma

  • Stir until the tomato-egg mixture thickens

  • Turn off the heat and serve on a plate

  • Tomato Egg Stir-Fry is ready to eat

I will give this a try!! I cook something similar by sauting colored peppers first, tomatoes, and onions. Once simmered, I add the eggs until cooked. My recipe is served with a piece of bread.

Wow, it sounds good adding some ingredients it would taste better, I never try this egg tomato with bread before, I think I would try it next time 😀
