Cooking Fish The Zesty Way!

A dish that is full of exciting and tangy flavors? I have a simple and economical way of cooking fish with a blend of many spices and more!

When it comes to a quick way of cooking fish, Fish Escabeche would be the best. This has been my favorite food since I was younger because of its savory flavors, not to mention that the little kid in me loved lively and tangy flavors.

Aside from being tasty, what is good about this food is that it is economical. Although there is a variety of ways of cooking this, I always apply the cheapest available ingredients in the market. And of course, I have my mini garden to back up the spices such as onion chives, pepper, onion, and other spices.

I remember the price of the fish per kilo back then was only two dollars. So I bought a lot of Sea breams. Seabreams are one of my favorite fishes because of their clean taste and meaty texture. And I love it more for being so affordable as well as can be cooked in different ways such as steam, grill, fry, and many more!

With the available ingredients I had at home, I had the pleasure of cooking the Sea Breams the zesty way on one fine evening for our dinner. I cooked it in three simple ways such as frying, making the escabeche sauce, and mixing all the ingredients and seasoning.


Here are the ingredients and cooking instructions for my favorite Fish Escabeche.

Ingredients

  • 5 pieces Sea Breams
  • 1/4 kilo oil
  • 1 sliced onion
  • 4 cloves minced Garlic
  • 1 Thumb Ginger
  • 1 Sweet Pepper
  • 2 pieces Carrots
  • 1/4 cup water
  • 1 Pouch Ketchup
  • 1 whole onion sliced for garnish
  • 1 set chopped onion chives for garnish

Cooking Instructions

The first thing that I did was to prepare and clean the fish and then season it with salt and pepper.

When the fish were already cleaned, the next thing I did was to fry all the fish over medium-high heat. I let the sea breaks be fried until all turned golden brown about five minutes per side.

After the fish were cooked, I just let them be set aside so I could prepare the Escabeche Sauce.

To make the escabeche sauce, I prepared all the spices and ingredients such as cooking oil, onions, garlic, sweet pepper, ginger, carrots, water, and ketchup.

After I fried the fish, I set them aside and used another pan so I could make the mixture. I added a bit of oil to sautee all the spices.

I first sauteed the garlic, onion, sweet pepper, and ginger until they were soft and aromatic.

After a minute, I added the carrots and also sauteed them. I poured the water, stirred it, and combined it. And then I added the ketchup and seasoned the mixture with salt and pepper.

I let the mixture simmer for a couple of minutes until the flavors are absorbed and made together.

After the mixture is cooked, I then combine the fish and sauce in the pan.

I carefully placed the fried fish into the pan with the sauce and mixed them until the sauce mixed over the fish to coat them evenly. I let the fish be simmered in the sauce for more minutes so the flavors would be infused into the fish.


And finally, here is my delicious Sea Bream Escabeche!

I transferred the fish and the sauce to the serving plate and let it be garnished with chopped onion chives and rounded-sliced onion.

I enjoyed the Fish Escabeche and as always I had unlimited rice. Ah! It was so delicious and I had a great dinner.

Aww, I did not know it is your favorite sis. Hehe. It is the quickest way to cook the fish in another look. I know there are many ways to cook this like adding vinegar, pineapples, sugar, and more.
