Making Spicy Minced Pork with Soft Tofu over Rice 🍛🍴

A happy Tuesday evening from Thailand, everyone! 😊 I normally cook for myself, and enjoying freshly cooked food, straight from the stove, is simply the best. I get to choose my own ingredients and season everything to my liking – it's perfect for me.

My lunch today was Spicy Minced Pork with Soft Tofu over Rice. It might not look particularly special, but in its simplicity, it holds a special taste that feels new for a tofu dish. Normally, tofu has a mild flavor, but today I made it with a spicy, intense Thai flavor, adding fresh chilies as well. This not only adds color to the dish but also enhances its deliciousness. Here are the steps:

🥚 Ingredients

  • 100 grams of minced pork
  • 2 eggs
  • 1 block soft tofu (or egg tofu)
  • 2 tablespoons light soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon coarsely chopped garlic
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon granulated sugar
  • A pinch of salt
  • 1 tablespoon tapioca starch (or cornstarch)
  • 1/2 cup of water
  • 1 tablespoon sliced or coriander spring onion
  • 1 tablespoon sliced fresh red chilies

🥣 Procedure

  • I'll start by marinating the minced pork. In a bowl, combine the minced pork, tapioca starch, 1 tablespoon of light soy sauce, ground black pepper, and salt.

  • Mix the ingredients well and let it marinate for about 10 minutes.

  • Now, to cook the pork: place a pan over low heat, add a little vegetable oil, and add the coarsely chopped garlic. Stir-fry until fragrant and golden.

  • Add the marinated minced pork and stir-fry until cooked. Remove and set aside.

  • Next, Crack the eggs into a bowl and beat them together. Set aside.

  • Prepare the soft tofu by cutting it into smaller pieces.

  • Mix the seasoning sauce in a bowl: the remaining 1 tablespoon of light soy sauce, oyster sauce, and sugar. Stir until combined.

  • Place the pan back over heat, add a little oil, and gently stir-fry the soft tofu over low heat.

  • Pour the beaten egg over and wait for it to set slightly. Then, gently stir-fry to combine everything.

  • Add the pre-mixed seasoning sauce.

  • Follow with the pre-cooked minced pork. Stir-fry everything until well combined.
  • Add the water and simmer all the ingredients over low heat for about 3 minutes, until the sauce thickens.

  • Finally, add the sliced coriander (or spring onions) and sliced fresh chilies. Stir to combine everything and turn off the heat.

  • Scoop onto a plate and enjoy with hot steamed rice.

  • Looks delicious, right everyone? 😄 The egg tofu has a smooth, silky texture just like steamed egg custard. The scrambled eggs are also tender and melt in my mouth, pairing perfectly with the minced pork that's been marinated until it's springy and tender. The flavor is a blend of savory, sweet, and spicy, absolutely perfect with steamed rice, as it creates a wonderfully balanced overall taste.

  • This is another dish that I’m really impressed with it’s something I could make and enjoy often. You should give it a try; it’s super easy! Thanks everyone for stopping by. Bye! 🤗

It looks similar to "Giniling" in our place but it's not spicy. Well, I think it's better to be spicy to add more appetizer for the food. !wine
