Today i spent whole day in my kitchen😅 to make super delicious Ghugni and aloo tikki ghugni chaat😍
First we will talk about Ghugni. It is a very simple and versatile healthy dish of the people of Odisha and Bengal and is eaten all the time. It is popular street food that's cooked with soaked dried green or yellow peas.There are various version of ghugni recipe.
I am sharing with you all North india style matar ghugni made using green dried green peas,potatoes, onions and spices.
So here we starts with Ghugni.
●Soak dried green peas in sufficient water for atleast 6 8 hours or leave it overnight.
Pressure cook the dried soak peas for 4 to 5 whistle until soft and mushy.
●Now boil some potatoes and peel the skin and cut them.
●In a pan or kadhai heat oil, add cumin seeds. Let it crackle then add chopped onions, fry them in meduim heat until brown in color.
●Add ginger garlic paste and saute it for few seconds until the rawness disappears.
Then add chopped tomatoes, turmeric powder, salt, red chilli powder, cumin powder. Cook on meduim flame until they are blended well and oil begins to seperates.
●Pop in 2 or 3 boil potatoes and boiled peas, and give it a good stir until they are mixed properly . Now add 1 cup of water.and mix well. Allow the mixture to cook for approximately 10 minutes. In between this add garam masala and mix well.
our Ghugni Is ready! You can have this with poori, roti or luchi, whatever you want to have.
But today I am making Aloo tikki Chaat, it is called* Aloo tikki Ghugni Chaat(potato patties pea chaat)
Aloo tikki is popular Indian street food. They are eaten as a snack too.
So let's begin with a simple easy recipe.
● we have already boiled the 🥔 potatoes for our Ghugni so no need to boil it again( if you boiled enough for both the dish).
Grate or Mash the potatoes in a bowl .
● insure that the potatoes are completely cooled before adding the other ingredients. Otherwise the mixture will become sticky.
Now add grated ginger, garam masala, chat masala , red chilli powder and salt.
●next add cornflour or rice flour. Mix it well. Insure the mixture should be non sticky, then only the tikki will be crispy.
●bind the mixture together and make ball shown in the pic below.
You can make big ones to make large tikkis.
Flatten them and stick up the cracked edges.
●Heat oil in a pan. You can shallow fry or fry them. I did shallow fry here.
●fry on a meduim flame. don't disturb them until the base turns golden and firm, otherwise they will break and mess up.
Flip them and fry on both the sides until golden and crisp.
● it's ready. Serve the aloo tikki hot with mint chutney or as a patty in a burger , or make aloo tikki chaat.
I made aloo tikki chat.
●** for chaat**.
Place tikkis in a plate. Then topped with onions, sweet tamarind jaggery chutney, Ghugni (that I made earlier is mentioned up), sev (or any mixture or bhujia), salt, black salt and chat masala.
If you want to skip ghugni,you can skip and add curd and different types of chutneys.
Let's the chaat feast begin!!!
