Prepared Bhindi Do Pyaza(stir fried onion okra curry)!

Hello hiveans! Hope all are doing well.
In today's blog I am going to share a recipe of Bhindi do pyaza that is okara with lots of onions you can call it Stir Fried Onion Okra Curry. It is an Indian vegetarian curry that is everyone's favorite.
It is simple recipe packed with lots of flavor. It is called bhindi do pyaza because it has double the amount of onions or adding them twice during different stages of cooking.

There are making variations of making Bhindi do Pyaza in North indian cuisine. It is enjoyed with plain roti or parantha
Okara is very popular vegetable and most people love it. Me, my daughter and my hubby are big fan of Bhindi and I try to make it once in a week for our dinner or lunch. Bhindi ki sabji with dal and roti- no one can beat this simple Indian meal like this.

Okra is slimy in nature . A good way to minimize the sliminess is to wash okra and then pat dry it with a kitchen towel. Or wash the okra and leave them overnight to dry on a paper towel. This is the way to to chop the okra next morning , the sliminess will be less.

So now let's start a new recipe called Bhindi do Pyaza-

•Cut the Okra in cubes as shown below in pic.

•cut onions in slices.

•Heat Mustard oil in a Kadai on meduim flame.

•Once oil is Hot , add cumin seeds and asofeodita and chopped Okra.

•saute at meduim heat for 10 mins then lower the flame and cooknfor 4 mins more. Remove bhindi from pan and set aside.

•Then in the same pan add oil, fennel.seeds, cumin seeds, chopped ginger and slices of onions.

•saute till golden in color

•Then add finely chopped tomatoes and mix.

•Add salt, coriander powder, turmeric powder, red chili powder, red mango powder and garam masala.

•cook the Onion and tomatoes well till they get mashed. Add 2 tablespoon water to cook them properly on low meduim flame.

•cover the kadahi or pan and cook .

• the water will be absorbed.

•in a pan heat one tablespoon oil and add cube onions shown in the pics with dried red chili.

•now add the cooked Bhindi(okra) and mix well.

•now add saute onions cubes and mix well.

•cook for 2 to 4 mins till onions are mixed up with the masalas and bhindi.

•mix well.

•Add crushed Kasuri Methi.

• finally add Lemon juice and give a last nice Mix.
Serve Bhindi Do Pyaza Roti or any Flatbread of your choice.

Waa~ This is such a mouth-watering dish! I used to dislike okra when I was a kid. Not was a fan of veggies. Now I appreciate them more.
