Prepared Rãjmå çhâwal (kidney beans and steamed rice)

When you have Rajma and Rice do you need anything else??
Infact serving beans with rice creates a full protein, which sometimes is difficult to achieve as a vegan. It is quite healty and inexpensive dish.

So, Today I am making Rajma curry. Rajma is the hindi word for Kidney beans.However this dish is so popular and delicious in North india. There are many varieties and sizes of kidney beans.
To make this recipe you can take any variety of rajma.

So now let's get to cooking it.

Preparation
●rinse and soak rajma beans in enough water to cover them. Soaking should be atleat 8 to 9 hours, so I soaked them the night before I cook.

●Now pressure cook the rajma for 6 to 8 whistles.
The cook time of your beans will vary depending on their depending on their quality.
The rajma beans should be completely cooked.

●while the beans are cooking , grated 2 onions, grate 2 tomatoes and make a crushed mixture of garlic ginger chilli paste.

●Now add 3 spoon of butter and 1 spoon of oil in a kadhai or pan. Keep the heat to low. Then add cumin seeds, mustard seeds and let them crackle, then add asofeodita and grated onions.
Stir and began to saute then in low flame. Make sure they don't get burnt as this will have bitter taste in curry.
Saute the onions till they are caramelized and golden brown.

●Now add the crushed ginger+ garlic+ chilli paste , grated tomatoes turmeric powder, salt, red chilli powder, coriander powder, amchur powder and mix it well.

● Now add grated tomatoes and mix it well. Saute it till the tomatoes are cooked and the oil seperates from the mixture and it becomes clumpy.

● Add rajma beans to the gravy and pour water to it and add salt.

●on a low meduim flame simmer witout lid for 10 to 12 minutes or until the curry tickens slightly. It shouldn't be watery.

●Stir it . Once the consistency is right you may add fresh cream. It is optional. Off the flame.

● you can garnish it with coriander leaves.

●serve Rajma masala with steamed rice, jeera rice or roti.
The combination of rajma rice is famous in North india.
