Prepared Sóùth Iñdiañ Màsàla Dosa côcônut chutnèy and sâmbhàr🤤
Hello hiveans. How are you all? Hope all are doing good.
Dosas is the ever popular South indian food made with fermented rice and lentil batter. Dosas are basically crispy soft and good to dunk in a bowl of coconut chutney and piping hot sambhar.
So let's start preparing.
Rinse 1 cup urad dal and 3 cup rice thoroughly and soak them for 5 hours or overnight, add 1 spoon of fenugreek seeds also.
30 mins before blending the batter, rinse and soak 2 spoon of flatten rice(poha) for mins.
Now add all the soaked ingredients to a mixer grinder or a blender. Grind till we get a fine consistency of the mixture in the batter. Take all the batter in a large bowl.
Add one spoon of sugar and mix it well.The batter should be fluffy.
Cover and allow to ferment for 8 to 12 hours . The time of fermentation will depend on the temperature and climate.
In the below pic you see the batter after 11 hours of fermentation. A good fermentation will double the volume of the batter with a light aroma
Masala dosa contains a spicy and aromatic stuffing made with boiled mashed potatoes, onions and spices in between thin rolled plain dosa.
Now time to make Masala.
Boil potatoes, peel and cut them into small pieces.
Heat oil and in heavy kadai. Add mustard seed,when they begin to crackle, add asofeodita, cumin seeds.curry leaves and finely chopped green chilli and capsicum (optional).
Add onions and saute until it turns translucent. Add turmeric powder salt and add boiled potatoes.
Mash the potatoes and add garam masala and coriander leaves.
For dosa
Heat non stick dosa tawa on meduim flame. When tawa is hot add one teaspoon of oil over tawa and spread it with cloth. Place a ladle full of batter in the center of tawa and spread it thin..
Spread little butter around the edges. Cook until the bottom surface starts to turn light brown. Flip the dosa and cook from other side too.
Place potato stuffing in the middle and press it gently using a fat spatula shown in the pic below.
Carefully lift the dosa with spatula and transfer it to a serving plate.
Preparation of sambhar
Chop the vegetables like onions, drumstick, Brinjal, capsicum, beans, carrot, pumpkin etc.
Pressure cook tur daal(pigeon pea lentil).
Heat oil in a pan add asofeodita, cumin seeds, mustard seeds,and let it splutter. The add curry leaves, crushed garlic and ginger, slice onions and green chillies.Saute for 2 mins.
Add veggies which we have chopped.
Add chopped tomatoes.
In a meanwhile make tamarind paste by soaking it with water and squeeze the pulp into water and remove the seeds.
Now add turmeric powder in the veggies for sambhar, add red Chilli powder, salt, coriander powder, and sambahar masala. Then add tamarind paste into pan and let it simmer for 2 min.
Add water and cooked dal to it .
For tadka heat oil in a pan then add jeera bay leaves, garlic and red chilli powder.
Then pour this tadka into sambhar. Bring it to boil for 2 to 3 min. Add salt as per taste and garnish it with coriander leaves.
Sambhar is ready
The last recipe for this dish is coconut chutney.
Now cut coconut into small pieces.
In a grinder add coconut, handful of peanuts, curry leaves and green chilli. Grind it with little water to make a smooth chutney.
In a pan heat oil add curry leaves and mustard seeds, pinch of turmeric(optional) and mix this into grinded chutney and mix it properly.
Coconut chutney is ready.
Serve the Masala Dosa with coconut chutney and hot sambhar.
We can make khaali dosa too.
Khali dosa means empty dosa which don't have filling on them like masala dosa. Light and fluffy dosas are served with chutney and butter.
