Stir fry Sweet Potato Curry!!

Sweeeeet potatoooo!
In my village its known as Shakarkandi and in Hindi it is known as Shakarkand.
We used to roast these sweet potatoes in the Chulha(clay stove) and have it in winter times! It is delicious and healthy.

There are lots of things that we can make by Sweetpotato like sweetpotato patties, flatbread(Parantha), sambhar, stew , curry and Halwa.
Today I am going to share a recipe of Sweet Potato Curry with you. Its a dry curry with onions, tangy flavour of lemon and spices. Its a healthy and delicious meal which we can seeve with steamed Rice/Chapati or any breads of your choice.

So lets see how to make this Stir Fry SweetPotato Curry.

INGREDIENTS-

▪︎sweetpotato-5
▪︎onions-½cup
▪︎greenchili-2
▪︎asofedita-½tspn
▪︎turmeric powder-½tspn
▪︎redchili powder-½tspn
▪︎salt-to the taste
▪︎Lemon juice-1 tbspn
▪︎corinader powder-½tspn
▪︎ginger-1 inch
▪︎garam masala-½tspn
▪︎oil-2tbspn

METHOD

1.take sweet potatoes wash it properly.

2.now peel it.

3.further cut it down in small pieces.

4.chop the onions and ginger along with greenchili.

5.heat oil in a pan.

6.add cumin seeds and asofedita.

7.then add chopped onions, ginger and green chilies.

8.saute it for 2 to 4 mins. If you want to add curry leaves, you may add, it gives nice flavour.

9.then add sweetpotatoes.

10.mix it.

11.add turmeric powder, red chilli powder, salt and garam masala

12.mix it and cook it till the sweetpotatoes become tender and cooked well.

13.then add coriander powder and lemon juice at last.

14.mix and off the flame. The stir fry sweetpotato curry is ready to serve in a bowl along with you fav Chapati or Rice.
