The Family Recipe for Hyacinth Bean Soup

Hyacinth Bean soup is my wife's favorite dish. We got a plastic bag of hyacinth bean from her village in our last visit few days ago. And today, she cooked her favorite soup. First, we had to peel every single beans that we had. It took us about 20 minutes to do so.

When we finished peeling the hyacinth beans, she washed them in the kitchen. Next, she boiled some water in middle size pan.

While waiting for the water to get hot, she prepared the seasoning ingredients for the soup. She took some garlic, galengal, turmeric, salt, candle nuts, shrimp paste and chili. All the ingredient went to the pestle and mortar.

We like pestle and mortar to grind the spices better than electric blender. The taste is better.

When the water was boiling, she put all the hyacinth beans into the pan. She let it boiled for some minutes. Then she put the seasoning into the pan as well. She began stirring the soup to mix beans with the seasoning.

After adding the seasoning, she also put in some pieces of torch ginger. Torch ginger, despite its name, did not resemble any smell of ginger. We used the plant of ginger as vegetables as well.

Few minutes later, the hyacinth beans soup was ready. This was our menu for breakfast. Along with that, we had rice and dried fish. Since this was my wife's favorite, she really enjoyed the soup.
