Chayote and Potato Fritters (Eng/Esp)

For breakfast today, I made some chayote and potato pancakes with a serving of oatmeal. It was a unique recipe that brightened up my morning. I enjoyed combining these ingredients because I think they have a neutral flavor, so they complement each other very well. This time, I decided to fry the pancakes to get that crispy texture I love so much.

Ingredients:
- 1 medium chayote
- 2 potatoes
- 30 grams of oat flour
- 1 egg
- Salt to taste
- Oil


Procedure:
I washed the potatoes, peeled them, and then grated them. I followed the same procedure for the chayote, after first removing the seeds. It had been a while since I’d used chayote in my cooking; I usually opt for zucchini and eggplant, but this time I decided to try something different, confident that the flavors would work well together.

I placed this mixture in a bowl, added the egg, and mixed it very well—the idea was to ensure these ingredients were fully incorporated. Finally, I added the oat flour to thicken the mixture and then seasoned it with a pinch of salt. I continued mixing until the mixture reached the ideal consistency.
Next, I placed a skillet on the stove with enough oil and poured in some of the batter to form the pancakes; I cooked them two at a time, making four in total. This process is similar to making pancakes or cachapas: you pour in the batter and spread it out until it forms a thin circle.


About six minutes on each side over medium heat was enough to achieve the desired result. I liked how these little pancakes turned out—crispy on the outside and soft on the inside. I loved this texture, and the flavor was very pleasant. I think grating the potatoes and chayote was a great decision because it allowed them to blend better into the dish I was aiming for.

Para el desayuno de hoy preparé unas tortitas de chayota y papas con una ración de avena. Una receta diferente que alegró la mañana. Me gustó combinar estos ingredientes, pues considero que tienen un sabor neutro, así que se complementan muy bien. En esta ocasión decidí freír estas torticas para el toque crujiente que tanto disfruto.

Ingredientes:
- 1 chayota mediana
- 2 papas
- 30 gramos de harina de avena
- 1 huevo
- Sal al gusto
- Aceite


Procedimiento:
Lavé las papas, retiré las conchas y luego las rallé, mismo procedimiento para la chayota, acá previamente quité la semilla. Tenía tiempo sin utilizar la chayota en mi cocina, por lo regular optaba por el calabacín y la berenjena, pero en esta ocasión probé algo distinto, con la certeza de que no tendría inconvenientes con los sabores.

Coloqué esta preparación en un envase, agregué el huevo y mezclé muy bien, la idea era que se integraran estos elementos. Finalmente agregué la harina de avena para dar mayor consistencia y seguidamente le puse su punto de sal. Seguí con el proceso de mezclado hasta alcanzar una consistencia ideal.
Después puse un sartén en la cocina con suficiente aceite y allí coloqué una cantidad de mezcla para ir formando las tortitas, las hice de dos en dos, en total salieron cuatro. Este proceso es similar a cocinar panquecas o cachapas, se coloca la mezcla y se extiende hasta lograr un círculo no muy grueso.


Unos seis minutos por cada lado, a fuego medio, fueron suficientes para alcanzar el resultado esperado. Me gustó como quedaron estas torticas, crujientes por fuera y suaves por dentro, amé esta textura, con un sabor muy agradable. Considero que fue un gran acierto rallar las papas y la chayota porque de esta forma se integraron mejor a la preparación que quería lograr.
