Roasted Chicken Curry with Aromatic Rice | Special meal for the first day of the Year.

This meal is the most popular during any kind of festival in Bangladeshi cuisine. Roasted chicken curry with Polao (Aromatic Rice), some fries on the side, and salad; that's all we need to make our appetite blessed.

Yesterday, there were guests at my place, I had to serve 6 people's lunch, afternoon snacks, and dinner. You can guess how busy we were in the kitchen. But it felt nice to have a warming environment with some of our beloved relatives and friends.

I prepared Roasted Chicken Curry with Aromatic Rice, Fish Fries and Deep Fried Eggplant, and some salad on the side at lunch.

Both of these recipes that I'm going to share today are quite complicated, need a lot of ingredients as well. If you are not familiar with Bangladeshi cuisine, you may find it quite difficult to follow the recipes. So I'm adding some YouTube/website links of the dishes, it will help you more to get the detailed ingredients and the process.

Let me share my step-by-step recipe photos.

I made the chicken gravy first by adding all the spices. Then cooked it for 15-20 minutes.

Kept aside the roasted chicken before preparing the gravy.

After the gravy is ready, I added the chicken, gave it a good mix, and cooked thoroughly so the spices can mix well.

I added a cup of water to make the curry smooth.

Before turning off the heat, I added some sugar and green chili to balance the flavor and for extra fragrance.

I cooked all the spices in vegetable oil, then added the fragrant rice to fry them for two or three minutes.

Then added some milk and cups of hot water to cook them thoroughly.

This is how it looks before the rice is properly cooked. The water will be reduced once the rice starts to cook.

The rice is almost done, I added some green chili and a spoon full of butter oil before turning off the heat.

There were some other dishes as well like I said; fish fries and eggplant fries. I plated them separately.

This was my son's plate, he enjoyed the special meal. I was happy as well serving this meal to everyone. It doesn't matter if the food was 100% in taste or if we are the best cook; it's the love and care we add with the food, that's all matters, no?
