Hello foodies, qué tal su día? Por aquí bastante bien gracias a Dios y lista para compartir con ustedes una receta que me toca el corazón y me transporta directo a mis raíces. Y es que como ya muchos saben, soy de Güiria, y hablar de mi tierra es hablar de una mezcla de sabores increíble.

En nuestro pueblo, el tarkari es uno de los platos más representativos de nuestra gastronomía y que llegó a nuestra tierra gracias a la cercanía que tenemos con Trinidad y Tobago, regalándonos esa maravillosa herencia hindú y caribeña que adoptamos como propia, y de ahí viene mi amor por las especias, que saben en casa no faltan.

Hello, food lovers! How’s your day going? Things are going pretty well here, thank God, and I’m ready to share with you a recipe that touches my heart and takes me right back to my roots. As many of you already know, I’m from Güiria, and talking about my homeland means talking about an incredible blend of flavors.

In our town, tarkari is one of the most iconic dishes of our cuisine. It came to our region thanks to our proximity to Trinidad and Tobago, which gifted us that wonderful blend of Indian and Caribbean heritage that we’ve adopted as our own—and that’s where my love for spices comes from, which, as you know, are always in abundance at home.


Las versiones más comunes y las más deliciosas son el tarkari de chivo y de pato, siendo mi preferido sin lugar a dudas el de chivo, y si le agregas coco mucho mejor, pero el día de hoy les traigo mi versión de un tarkari de pollo casero, una adaptación súper sencilla de este clásico del estado Sucre lleno de muchísimo sabor y un significado muy especial para mí.

Esta receta está enfocada 100% en el gran sabor de las especias y la cebolla, logrando un sabor a curry puro, reconfortante y con una salsa súper deliciosa y sedosa que abraza el pollo a la perfección, y por su fuera poco, es una receta rápida, reconfortante y deliciosa, así que no pueden pedir más! Y ahora sin más demora vamos con los ingredientes y el procedimiento para preparar este delicioso tarkari de pollo casero.

The most common and delicious versions are goat and duck tarkari—goat is undoubtedly my favorite—and it’s even better if you add coconut. But today I’m sharing my version of a homemade chicken tarkari, a super simple adaptation of this classic dish from Sucre State that’s bursting with flavor and holds a very special meaning for me.

This recipe focuses 100% on the rich flavor of the spices and onions, resulting in a pure, comforting curry flavor with a super delicious, silky sauce that coats the chicken perfectly. And as if that weren’t enough, it’s a quick, comforting, and delicious recipe—so you couldn’t ask for more! And now, without further ado, let’s get to the ingredients and instructions for making this delicious homemade chicken tarkari.


Ingredientes

1 kg de pollo sin piel (muslos y ante muslos)
2 cucharadas de curry
1 cucharadita de comino
4 dientes de ajo machacados
1 cebolla grande cortada en cubos
1 taza de caldo de pollo
2 cucharadas de harina de trigo
Aceite para cocinar
1 charada de margarina
Sal y pimienta negra al gusto

Ingredients

1 kg skinless chicken (thighs and drumsticks)
2 tablespoons curry powder
1 teaspoon cumin
4 cloves garlic, crushed
1 large onion, diced
1 cup chicken broth
2 tablespoons all-purpose flour
1 tablespoon margarine
Cooking oil
Salt and black pepper to taste

Procedimiento/Procedure

Para la preparación de esta deliciosa receta, lo primero que haremos será condimentar nuestro pollo, así que en un bol grande, agregamos el pollo y le incorporamos la mitad de los ajos machacados, 1/2 cucharadita de comino molido, una cucharada de curry, sal y pimienta negra al gusto y la harina de trigo. Mezclamos todo muy bien con las manos para que el pollo se llene por completo de todos los ingredientes y lo dejamos marinar en el refrigerador por una hora como mínimo.

To prepare this delicious recipe, the first thing we’ll do is season the chicken. So, in a large bowl, add the chicken and mix in half of the crushed garlic, 1/2 teaspoon of ground cumin, one tablespoon of curry powder, salt and black pepper to taste, and the wheat flour. Mix everything thoroughly with your hands so the chicken is completely coated with all the ingredients, then let it marinate in the refrigerator for at least one hour.


Una vez transcurrido el tiempo del marinado, calentamos dos cucharadas de aceite en una olla grande a fuego alto, agregamos las piezas de pollo y las cocinamos por 4 minutos por cada lado a para así sellarlo y darle un bonito color.

Once the marinating time is up, heat two tablespoons of oil in a large pot over high heat, add the chicken pieces, and cook them for 4 minutes on each side to sear them and give them a nice color.


Seguidamente agregamos la cebolla
picada y el resto de los dientes de ajo, y cocinamos todo por unos 7 minutos, removiendo constantemente, hasta que haya cristalizado y comience a caramelizar ligeramente la cebolla.

Next, add the chopped onion and the remaining garlic cloves, and cook everything for about 7 minutes, stirring constantly, until the onion has softened and begins to caramelize slightly.


El siguiente paso es agregar el curry restante y el resto de las especias a nuestro pollo, lo cocinamos por unos 30 segundos mezclándolo enérgicamente con la cebolla y el curry para que todo quede perfectamente integrado. Tapamos la olla y dejamos que el pollo se cocine tapado a fuego medio bajo durante 15 minutos.

The next step is to add the remaining curry and the rest of the spices to the chicken. Cook for about 30 seconds, stirring vigorously to combine the chicken, onion, and curry so that everything is thoroughly mixed. Cover the pot and let the chicken cook, covered, over medium-low heat for 15 minutes.


Transcurridos los 15 minutos, agregamos la taza de caldo de pollo junto con la para armar nuestra salsa que gracias a la harina de trigo que agregamos a nuestras piezas de pollo queda con muy buena consistencia, y ni hablar de su sabor. Rectificamos la sal, tapamos nuevamente y dejamos cocinar a fuego bajo por 20 minutos más, o hasta que la salsa haya reducido hasta quedar espesa y con ese color dorado espectacular que ven en las fotos.

After 15 minutes, add the cup of chicken broth to make the sauce. Thanks to the flour we added to the chicken pieces, the sauce has a great consistency—not to mention its flavor. Adjust the salt to taste, cover again, and let it cook over low heat for another 20 minutes, or until the sauce has reduced to a thick consistency and has that spectacular golden color you see in the photos.


La verdad es que es un plato increíble que además de conectarme de inmediato con mi niñez y adolescencia en Güiria; nos regala un pollo sumamente jugoso por dentro y la salsa de cebolla y curry tiene un sabor realmente increíble, sobre todo si toman en cuenta que son tan pocos ingredientes.

En casa lo servimos acompañado del infaltable arroz blanco para aprovechar la deliciosa salsa, y para crear un contraste de sabores agregamos plátanos dulces con canela, y la verdad es que fue un almuerzo súper deli, y que espero que se animen a prepararlo en casa.

The truth is, it’s an incredible dish that not only instantly takes me back to my childhood and teenage years in Güiria, but also treats us to chicken that’s incredibly juicy on the inside, and the onion and curry sauce has a truly incredible flavor—especially when you consider how few ingredients it has.

At home, we serve it with the ever-present white rice to soak up the delicious sauce, and to create a contrast of flavors, we add sweet plantains with cinnamon. It really was a super delicious lunch, and I hope you’ll give it a try at home.
