Lunch with friends!

Today we had a guest in our house! Little Man's godfather came to visit in the morning and brought some bougatsa pies for our morning coffee. As we hadn't seen each other in a while, we suggested he stayed for lunch too as I was about to cook something that had been on my mind for a few weeks now...

Linguini in a shrimp sauce!

Easy and delicious! I boiled my pasta first, saved some of the salted water for the sauce and then I sautéed my shrimps (I used the smaller size, since they were cheaper), finished with a little rosé wine and then added some finely chopped tomatoes, red peppers, parsley, green onion, tomato juice, mustard and a variety of spices (dried garlic, curry, smoked paprika, black pepper, salt and chilly pepper flakes). I left my sauce boil in the water where my linguini had previously been cooked and once ready, I put my pasta in my big cooking pot and gave it all a very good mixing.

I also had some sausage in the freezer. I fried half of (although I rarely cook sausages that way, as I find it too greasy for my stomach), however this time I wanted to try something different, so I finished my half sausage with the juice of half a lemon, a spoon of mustard and a little wine (the same I used for the pasta sauce). The final result was pretty pretty tasty!!

For the other half, I used some scrambled eggs, nothing too complex here...

Some grated gruyere cheese on top of this yummy linguini dish and of course...

A glass (ok, for me maybe just a few sips, as alcohol is not my cup of tea) of some cold malagouzia (a dry white wine) completes the menu.

No salad unfortunately, because the boys are not vegetable fans, but I assure you, I had no more room in my stomach for any salad.

What did you have today?
