Sweet buns with kefir!

I find myself in a cooking trance these days and I cannot stop trying new recipes I find on the Internet, just like this one with the sweet buns made with kefir:

Ingredients

For the first step:

  • 250 ml lukewarm water
  • 1 tbsp sugar
  • 50 gr fresh yeast

For the second step:

  • 1 kg strong flour (the one we use for bread - although I used 600 gr of strong and 400 gr of all-purpose because the last time I used solely strong flour, my dough came out too thick and my buns were not very soft and fluffy)
  • 100 gr melted butter
  • 2 medium eggs
  • 250 ml kefir
  • 1 tsp baking soda
  • 1 tsp mahlab
  • 1/2 tsp cardamom
  • 1/2 tsp salt
  • 2 vanilla
  • 200 gr sugar
  • 2 gr mastic
  • 50 ml vegetable oil

For the third and last step:

  • 1 egg
  • 1 tbsp milk
  • sesame

First you dilute the yeast and one tablespoon of sugar in the water and let it in a warm place for about 5-10 minutes. The sugar will help activate the yeast. Then, it's time for the second step, adding the rest of the ingredients and start kneading!

All dry ingredients, except for the salt and baking soda, are mixed in one bowl and in a second bowl you mix all the liquid ingredients, except for the vegetable oil, with the salt and baking soda. Add half of your flour mix in the bowl with the liquids and start mixing them together. Once all the flour is absorbed, you can start adding the rest of the flour mix in small batches. The vegetable oil comes in the end. Cover and let your soft dough rest in a warm place until it gets double in size (don't forget to use a large bowl as you don't want to have any dough leaks on the floor).

Make your buns in any shape you like (I followed the video for mine), add the egg whipped with the one tablespoon of milk on top...

Some sesame seeds and your buns are ready for the oven.

Bake for 15 minutes at 180° C in a preheated oven using the air mode, then cover the buns with a sheet of baking paper and let them in the oven for 10 more minutes.

Soft, fluffy, not very sweet (next time I'm gonna use a little more sugar and some orange juice and zest to enhance their flavor) and they are perfect to fill with some praline or jam...

They look awesome minus the sesame seeds, not a fan of them. I’ll give it a try.
