How to make Dahi | curd at home. I am sure many of us have wondered this question. With yogurt becomes a rage at pays to know how to make this at home. Flavored yogurt, yoghurt for smoothies , youhurt for traditional use all of those use cases can be solved with this one recipe. The beauty of dahi is that its a living dish. Once you make it at home you an keep a small portion from the existing lot to make the next lot and so on so forth.

This recipe uses a starter. A starter is small amount of youghurt used to kick start the fermentation process. It is also possible to create curd without a starter using green chillis/red chillis/lemon etc. However for beginners its advisable to use a starter.

Tip

Just get a small amount of curd from the super market. DO NOT get flavored or sweetened yoghurt. Just get plain simple white curd.

The milk should be heated till lukewarm. In this case Lukewarm is a strict hard stop. Must be followed strictly. Should NOT be HOT. if that happens wait till it cools down to lukewarm.

I have used a spoon of milk powder. This gives it a nice texture. Its not mandatory.

The milk should be Whole Cream | Full Cream milk.

Ingredients

2 tbsp curd.
1 liter whole cream milk.
1.5 tsp milk powder ( optional)

The recipe

Heat the milk till its LUKEWARM. DO NOT HEAT.
Pour a small portion of the milk ( 150 ml) into another bowl and mix the curd with it nicely.
Add the milk powder and mix well.
Now add this mixture to the rest of the milk.
Pour the solution between two containers to and fro to ensure complete mixing.
Leave in a casserole if possible. If not then pour into a steel container and wrap up with a cloth.
Leave in a warm corner for 10 hours. If you live in a cold place you may need to leave it for much longer depending on the cold. Could even be 15-16 hours or more if its really cold.

There! you have made your first bit of Yoghurt. Set a little aside, about 50 mgs for the next lot of Yoghurt. You can use this to make smoothies, flavored Yoghurt, Lassi, butter milk, cooking or put it to traditional uses.
