Spinach Farfalle recipe is one of my favorite. It combines the taste and indulgence of Italian cuisine with the health benefits of spinach. Whenever my kids insisted that their regular food was getting boring i would come up with this one. It never failed to enthuse them to come to the dinner table

Tips

The blanching of the spinach is important. If not done properly it will result in spinach smelling of chloro fill. That is not good.If you don't know refer to this link for Palak Paneer recipe. It has blanching. Once blanched you can make the puree in a mixer.

The benefits of Spinach are many, Its loaded with lots of Iron and Vitamins like A and C to ensure that its protects your body in many ways. Its an excellent source of anti-oxidants. Its great for immunity and protection against lifestyle illnesses like High blood pressure etc. Its also touted to have anti-cancer properties.

I used Ghee for my preparation. You can use also use olive oil.

Ingredients

2 cups farfalle pasta
2 tbsp garlic minced or grated.
1 cup blanched spinach puree.
Pepper to Taste
Salt to taste
1 tsp oregano
3 tbsp ghee
1/2 cup cream
1/2 cup grated cheese

The Recipe

Boil some water in a pan. Add some salt and the pasta and let it cook. Once done strain the pasta and keep aside.
Retain 1/2 cup of the water used for boiling. Keep aside.
Heat a pan with a tsp of ghee add the garlic and fry for a few secs.
Add the spinach puree and cook for 3-4 mins.
Add the Cream into the spinach puree mix.
Now you can add the black pepper, salt and the oregano.Mix well.
Next add the farfalle and mix well.
Add 1/2 cup of the pasta boiling water.
Sautee for a few mins untill it becomes thick and creamy.
Serve in a plate hot and Add the grated cheese on top liberally.

There ! the Spinach farfalle is ready. This is a great item to cook up for guests or as dinner at home. Adults enjoy this and kids love it. However its advisable to eat this as soon as cooked. Pasta is not very enjoyable when it goes cold.
