Home-made Spring Rolls With Mongo Sprouts

Hello everyone! How's your holiday celebration? Since it's Christmas time, I've managed to spend some time to soak a cup of mongo beans for my planned veggie spring rolls called Lumpia. It's for the right occasion and so easy to cook few minutes before Media Noche. Here's my preparation.

You need the following:

1. Ground meat

2. Mongo sprouts
3. Green beans, cut into small pieces.
4. Carrots, cubed
5. Bell pepper, chopped
6. Onions, chopped
7. Garlic, minced
8. Salt and seasoning to taste.
9. Vegetable oil
10. Flour crepe for wrapping.

Instructions:

  • Pour cooking oil and saute onions, garlic stirring occasionally.

  • Ground meat follows, stirring occasionally. You may add 2 cups of water to make the meat fully cooked. Only small amount of water should be left before mixing the rest of the ingredients.

  • Add the mongo sprouts and stir. Cover it for few minutes.

  • Add the remaining ingredients in one setting. Make it half cooked only.

Take note: Separate the crepes while waiting for the ingredients to cool.

In wrapping, one scoop will be enough to wrap. Do not include drips to make a smooth wrap.

After wrapping, you may place it in a container and keep it refrigerated until needed. Fry it few minutes before meal to achieve a hot and crispy Vegetable Lumpia!

Lastly, prepare your favorite dips such as:

For me, I prefer the traditional minced garlic and vinegar as my dip.
