Remember the First full lockdown?

It is so weird to think that this actually have happened already a life time ago and we are still not completely save and out of this whole messy situation that is Covid.

During the first lockdown I was lucky to go and stay at my best friends' and we had the luxury of time, something we usually don't have in our daily routines. So probably just like me you have done a lot of cooking. I know I did.

Vegan Style

Normally I am not the type of person that enjoy to cook for hours, but when you have all the time in the World and you can't go anywhere, cooking is kind of the main event of the day. Let me tell you that after a while it got difficult to keep coming up with new and delicious recipes. Specially due to the panic installed, the supermarkets were not really stocked.

The funny part is that the fresh vegetables and the Vegan products that usually are untouched and fully stocked were also sold out. People with no special diets have decided that it would be fine to buy products that they haven't seen or tasted in their life and leave everyone else without food.

3 of us

Since it was 3 of us in the house that made it easier. We have decided that each day 1 person would be responsible for preparing the meals for the day, so we only would have to cook every 3 days. It was not a bad business. Have to say that by the end of the lockdown I was getting tired and running out of ideas, and as I said, the lack of diversity on the products didn't help.

Not cooking much lately

Now I live by myself and cooking for 1 is even more annoying, Also the fact that I have been working 40 hours it doesn't help. The energy to cook and do all the dishes is not much. But looking at all this dishes and knowing that soon I will have more free time I am excited to keep experimenting in the Kitchen and who knows even to come out with a Video series where we cook together, would you like that idea?

"People with no special diets have decided that it would be fine to buy products that they haven't seen or tasted in their life and leave everyone else without food."

I lost faith in people because of this. When there was a pasta shortage people went to the gluten free sections and emptied then. My friend who is coeliac (allergic to gluten), struggled to find food during the pandemic.

Outrageously good pictures of food I would love to consume, and all at once. You aren't doing a lot of favours for my planned diet.
