Baked New Zealand Mussels with Cream Cheese and Miso 🇳🇿

This week's topic on Hive Top Chef is " From the Oven". I got a bit of luck with this. I found a wonderful box of Green New Zealand mussels when I went to the big supermarket in town to do small shopping and surprisingly spot them in the frozen section around the seafood area so I decided to grab one. They are perfect for baked and absolutely delicious.

It's a huge green shell mussel and much larger than the local black shelled mussels that I usually see. They are pre-cooked and on a half shell, making them very easy to cook. Just defrost, top and bake! That's it!!!!

I'll prepare green mussels or also known as New Zealand mussels to cook in the most simple bake. I just need a few ingredients for this recipe, all I need was the green mussels with garlic butter, miso, minced garlic, minced shallots, finely chopped carrot, milk, cream cheese, fresh chives, and shredded mozzarella if you like a little bit of cheesy along with olive oil.

This bake mussels recipe is very simple, and there are a few special components for this recipe. First, I like to add the miso, a fermented bean paste that will bring a salty umami flavor to this dish. Don't forget to adjust the salinity following your taste buds because each brand of miso has a different saltiness. If you can't find miso, you can use soy sauce instead. And I also prefer to use the standard full-fat cream cheese for this recipe.

I do twice bake!!! Yes! I highly recommend doing it. First, I'll coat the New Zealand mussels with garlic butter and miso then bake them for about 5 minutes and top them with a mixture of cream cheese sauce and sprinkle the shredded mozzarella and bring them back to the oven and bake them again for about 5 minutes more.

Gathering the ingredients

 

  • 5 New Zealand Mussels
  • 2 Teaspoon Miso
  • ½ Teaspoon Black Pepper
  • 1 Tablespoon Garlic Butter
  • 2 Teaspoon Olive Oil
  • 1 Tablespoon Finely Chop Garlic
  • 1 Tablespoon Finely Chop Shallot
  • 1 Tablespoon Finely Chop Carrot
  • 1 Tablespoon Finely Chop Chives
  • 3 Tablespoon Cream Cheese
  • 1/3 Cup Milk
  • 1 Teaspoon Flour

How to Cook Cream Cheese-Miso Sauce

 

Heat the olive oil in a saucepan and cook the garlic, red onions, and carrot until cooked and soft.

Drop the mixture of flour and milk into the saucepan.

Bring to boil, then add the garlic, shallots, carrot, and about a teaspoon of miso.

Add the cream cheese.

Keep continuously stirring.

The First Bake

 

Lay the mussels on a baking tray.

Gently coat each mussel with garlic butter.

Repeat coat the remaining Green Mussels

Then coat about 1 teaspoon of miso as another layer and sprinkle with the pepper.

Pre-heat the oven to 400F and bake the mussels for about 5 minutes or until the surface becomes golden brown

Remove from the oven.

The Twice Bake

 

Top with the Cream Cheese Sauce.

Sprinkle with carrot, chive, and shredded mozzarella.

Bake the mussels for about 5 minutes more at 400F.

Carefully remove the New Zealand mussels from the oven and place them on a serving platter.

Twice Baked New Zealand mussels are basically a way to eat New Zealand Mussels in a cute little mussels shell. Such an amazing appetizer or as a late-night snack with some cool drinks!

I love New Zealand Mussels because they are tasty, juicy, sweet, and have lots of meat but if you don't like or can't find New Zealand Mussels, this recipe will work well with scallops, and oysters, clams, or any type of shells! I hope you guys enjoy my recipe and give this recipe a try. 💗

It is very troublesome and difficult to open and clean the mussels in my country.Do you also sell them ready-made or not sandy?

Hi @appiades! I live in a city by the sea so there will be a lot of seafood for sale in the market. And most vendors will clean and prepare the ingredients for cooking. 😀
