So wanna try extremely spicy and sour soup to recover! Here one of the best hangover soup in Thailand, Leng Saap - XXL Pork Spine ( The Mountain of Thai Hangover Soup).

Leng Saap is well known favorite for Thai people because of it's the based broth for Noodles soup but a couple of year ago, Mark Wiens who is one of the most popular Youtuber posted a video about Thailand Street Food and showed this crazy Everest Mountain Pork Bone Soup and made them well known popular among the tourists. So let's cook together with me and see how does it look like.πŸ˜†

πŸ‡¨πŸ‡³ Leng is short for Iea Leng means pork spine in Teochew Chinese and while Saap refers delicious and spicy in Northeast Thai Language. πŸ‡ΉπŸ‡­

Leng Saap is made from pork back bones soup including the all powerful spiciness from load of chili and the sourness of sassy lime which I'll cooked this dish by using the pressure cooker which it'll short cut the time to boiled the broth.

The soup will help to rehydrate and the juicy tender meat pork will gives the energy and the chili helps to sweat the alcohol out and the lime will bring the refreshing alert plus the aromatic pepperiness of culantro. It's the best served with hot steam jasmine rice which is truly the definition for the hangover cure.

Here what we need for XXL Leng Saap!

  • 1.5 KG Pork Spine
  • 1/2 Daikon
  • 1/2 Onion
  • 6 Cloves Garlic
  • 3 Culantro
  • 20 Thai Bird Chili
  • 1 Crystalline Sugar
  • 2 Tablespoon Sea Salt
  • 2 Tablespoon Soy Sauce
  • 2 Tablespoon Lime
  • 2 Tablespoon Fish Sauce

How to prepare the vegetable

  • Cut half the onion and peel off the skin.

  • Smash the garlic and don't take skin off.

  • Cut half the daikon and peel skin off and cut it and set asdide.

  • Clean the pork and take the white bone marrow away to get rid of the strong smell and make the clear soup.

  • Put the pressure cooker over the medium heat and pour the water into the pressure cooker and drop the pork spine.

  • Drop the veggie and all the seasoning and cover the lid.

  • Boiled for another 10 minutes more and turn off the heat and let's the steam worked for 1 hour .

  • Drop the chili, lime juice, fish sauce and whisk it together.
  • Drop the culantro and add the broth and whisk it.

  • Lay down the pork bone as the base first and put another pieces as the pyramid shape.
  • Drop the mixing of seasoning broth and topped the chili over the top.
